%20so%20I'm%20at%20about%20the%20max%20on%20stress%20around%20here.%20If%20stuff%20gets%20a%20little%20but%20madder,%20who%20am%20I%20to%20complain?%3C/p%3E%3Cp%3EI%20was%20asked%20by%20the%20Dricolls%20people%20to%20create%20a%20muffin%20using%20some%20of%20their%20berries.%20They%20even%20sent%20me%20some%20berry%20coupons%20so%20I%20could%20do%20this,%20but%20I'd%20already%20bought%20my%20own%20Driscoll%20Blackberries,%20so%20I%20was%20all%20set%20to%20go.%3C/p%3E%3Cp%3EIn%20Northern%20California,%20blackberries%20run%20rampant%20all%20during%20the%20summer%20months,%20and%20we've%20been%20surrounded%20by%20them%20every%20year%20since%20we've%20been%20living%20in%20Sonoma.%20But,%20even%20when%20the%20berries%20are%20available%20plentifully,%20we%20find%20ourselves%20engaged%20in%20a%20running%20battle%20with%20the%20racoons,%20the%20deer%20and%20the%20birds%20over%20who%20gets%20them%20first%20and%20we%20don't%20always%20win.%20This%20is%20where%20Driscoll%20comes%20in.%20In%20the%20battle%20for%20natural%20berry%20supremacy,%20Driscoll%20insures%20we%20(the%20humans%20)%20have%20a%20shot.%3C/p%3E%3Cp%3EI%20don't%20bake%20muffins%20very%20often%20but%20I%20have%20a%20favorite%20Italian%20polenta%20cake%20recipe%20from%20the%20region%20in%20Tuscany%20where%20my%20family%20originates.%20I%20tweaked%20it%20a%20little%20and%20came%20up%20with%20something%20that%20I%20thought%20would%20make%20a%20great%20muffin%20for%20breakfast,%20dessert,%20tea,%20or%20any%20other%20time.%3C/p%3E%3Cp%3EBlackberry%20Rosemary%20Corn%20Muffins%3C/p%3E%3Cp%3EHere's%20What%20You%20Need:%3C/p%3E%3Cp%3ECream%20the%20butter%20and%20sugar%20together%20with%20an%20electric%20beater.%3C/p%3E%3Cp%3EWhen%20it's%20nice%20and%20fluffy%20add%20in:%3C/p%3E%3Cp%3E1%20cup%20of%20fine%20cornmeal%20flour,%203/4%20cup%20of%20all%20purpose%20flour,%203/4%20tsp%20of%20salt,1%20tsp%20of%20baking%20powder...%3C/p%3E%3Cp%3E...2%20large%20eggs...%3C/p%3E%3Cp%3E...and%201%20egg%20yolk...%3C/p%3E%3Cp%3EAdd%20in%20the%20milk.%3C/p%3E%3Cp%3EBeat%20the%20cake%20batter%20with%20an%20electric%20beater%20on%20the%20high%20setting%20for%20about%203%20minutes.%20It%20will%20turn%20yellow.%3C/p%3E%3Cp%3EFinely%20chop%203%20sprigs%20of%20fresh%20rosemary.%3C/p%3E%3Cp%3EAdd%20the%20chopped%20rosemary%20to%20the%20batter.%3C/p%3E%3Cp%3EMix%20it%20in%20well.%3C/p%3E%3Cp%3EAdd%20the%20fresh%20berries%20to%20the%20batter...%3C/p%3E%3Cp%3EFold%20them%20in%20carefully%20so%20you%20don't%20mash%20them.%3C/p%3E%3Cp%3EPlace%20paper%20muffin%20cups%20into%20a%20muffin%20tray.%3C/p%3E%3Cp%3EFill%20the%20muffin%20cups%20part%20way,%20the%20muffins%20will%20rise.%3C/p%3E%3Cp%3EPop%20the%20muffins%20into%20the%20center%20of%20the%20oven%20and%20bake%20them%20for%2040%20minutes.%3C/p%3E%3Cp%3EWhile%20the%20muffins%20are%20baking:%20Chop%20more%20rosemary%20until%20you%20have%201/3%20cup%20of%20it.%3C/p%3E%3Cp%3EAdd%20it%20to%20a%20small%20pan%20along%20with%20%203/4%20cup%20of%20water%20and%203/4%20cup%20of%20sugar.%3C/p%3E%3Cp%3EStir%20everything%20together%20well%20on%20medium%20heat%20until%20it%20comes%20to%20a%20simmer.%3C/p%3E%3Cp%3EThen%20turn%20the%20heat%20down,%20and%20let%20it%20gently%20simmer%20for%2010%20minutes.%3C/p%3E%3Cp%3EThen%20take%20it%20off%20the%20heat%20and%20let%20it%20sit%20for%2030%20minutes.%3C/p%3E%3Cp%3EStrain%20the%20mixture%20through%20a%20sieve%20and%20pour%20it%20into%20a%20measuring%20cup.%3C/p%3E%3Cp%3ESet%20it%20aside.%3C/p%3E%3Cp%3ETake%20the%20muffins%20come%20out%20of%20the%20oven,%20when%20they're%20firm%20and%20golden.%3C/p%3E%3Cp%3EBrush%20the%20tops%20with%20the%20rosemary%20syrup.%3C/p%3E%3Cp%3ELet%20the%20syrup%20soak%20in%20and%20then%20brush%20them%20again.%3C/p%3E%3Cp%3ETake%20the%20muffins%20out%20of%20the%20pan%20and%20let%20them%20cool%20on%20a%20baking%20sheet.%3C/p%3E%3Cp%3EServe%20them%20up%20and%20enjoy!%3C/p%3E%3Cp%3ESweet%20with%20the%20rosemary%20sugar%20glaze%20and%20plump%20with%20fresh%20Driscoll%20Blackberries,%20these%20muffins%20go%20great%20with%20coffee,%20tea%20or%20milk.%20Serve%20them%20with%20butter%20or%20with%20a%20nice%20dab%20of%20goat%20cheese.%20Coming%20up%20next,%20it's%20Holi%20time%20again%20and%20colors%20aren't%20the%20only%20things%20flying%20through%20the%20air.%20A%20quick%20and%20easy%20Holi%20dessert%20can%20put%20anyone%20in%20a%20celebratory%20mood.%20Follow%20along%20on%20Twitter%20at%20@kathygori%3C/p%3E){kind=link}
