You definitely could buy a jar of muffaletta olive salad, but why, when it is so easy to make. Hubby even said this was the best sandwich he’s ever had–and he’s had a thousand or two in his day…
Muffaletta
INGREDIENTS:
OLIVE SALAD:
**Be sure to drain any liquid from the wet ingredients first
- 4 large cloves garlic-finely minced
- 1 large jar pimento-stuffed green olives-chopped
- 1/4 cup pepperoncini-chopped
- 1/2 stalk celery, very finely chopped
- 1 medium carrot, very finely chopped
- 1/2 cup cauliflower-finely chopped
- 1/3 cup cocktail onions, well drained and chopped
- 1/2 cup capers, drained and rinsed
- 1/2 cup Kalamata olives-chopped
- 2 t celery seeds
- 1t dried oregano
- 1/2 teaspoon freshly ground black pepper
- 1 cup good olive oil
DIRECTIONS:
Combine everything in a large bowl and cover with the olive oil. Stir to combine, cover and marinate over night or up to 3 days in the refrigerator.
SANDWICH:
1 round loaf Italian bread
1 1/2 pounds assorted deli meats of your choosing
1/2 pound sliced cheeses of your choosing
1 cup olive salad
DIRECTIONS:
Slice the loaf in half horizontally. Scoop out some of the middle for the ingredients. Cover both halves of the bread with the olive salad, then layer meats and cheeses on the bottom and cover with the top. Wrap the sandwich tightly in plastic wrap and store in the refrigerator for 30-45 minutes to let the salad juices absorb into the bread, but not too long so that it gets soggy.
