- Season steaks with 1/2 teaspoon salt and 1/4 teaspoon of the black pepper; set aside. Place buttermilk in a shallow dish. Place 3/4 c. of the flour in another shallow dish. Dip steaks in buttermilk; then in flour, coating completely. In a large deep skillet, heat shorteining over Medium-High heat till warm, but not smoking. Add in steaks and cook 3-4 min per side or possibly till cooked through and coating is golden brown. Drain on a paper towel-lined platter and cover to keep hot For gravy, add in remaining 3 Tbsp. flour, 1/2 teaspoon salt and 1/4 teaspoon pepper to the skillet. Cook 2-3 min, or possibly till flour is browned, stirring constantly. Add in milkand stir till gravy thickens. Top steak with gravy and serve.
