%20that%20you%20have,%20this%20is%20the%20place%20to%20go.%20Also,%20if%20you're%20looking%20to%20buy%20products%20or%20services%20that%20are%20personalized%20and%20exclusive,%20then%20this%20is%20the%20place%20to%20go!%20You%20can%20also%20read%20my%20recipes%20there,%20the%20first%20of%20which%20was%20a%20special%20chocolate%20cake%20that%20I%20baked%20for%20my%20son's%202nd%20birthday.%20Although%20I%20would%20love%20to%20post%20new%20and%20different%20recipes%20on%20both%20this%20blog%20and%20the%20Eywa's%20Basket%20blog,%20I%20am%20sadly%20unable%20to%20do%20so%20until%20maybe%20July,%20due%20to%20my%20work%20(some%20of%20you%20know%20that%20I%20freelance%20as%20a%20featured%20writer%20for%20a%20women-oriented%20website)%20and%20study%20commitments%20(my%20Montessori%20teacher%20training%20course).%20So%20I%20will%20be%20re-posting%20some%20of%20my%20favorite%20recipes%20on%20both%20the%20sites%20until%20I%20get%20myself%20better%20organized%20on%20both%20the%20personal%20and%20work%20fronts%20and%20my%20exams%20get%20over!!!%3C/p%3E%3Cp%3EOne%20reason%20why%20I%20like%20baked%20meals%20for%20dinner%20is%20because%20my%20mom%20used%20to%20make%20them%20most%20of%20the%20time.%20When%20we%20were%20teenagers,%20this%20moussaka%20was%20something%20my%20brother%20and%20I%20would%20wait%20for%20with%20bated%20breath.%20My%20mom%20didn't%20disappoint-she%20made%20sure%20she%20baked%20it%20at%20least%20once%20or%20twice%20a%20month.%20I%20think%20it's%20great%20that%20she%20liked%20to%20introduce%20us%20to%20different%20cuisines%20from%20around%20the%20world%20and%20liked%20trying%20out%20new%20recipes.%20Because%20of%20her,%20I'm%20more%20open%20to%20experimentation!%20Once%20she%20tried%20this%20recipe,%20it%20became%20a%20regular%20family%20favorite,%20and%20now%20I%20can%20even%20make%20it%20with%20my%20eyes%20closed!%3C/p%3E%3Cp%3EMoussaka%20is%20a%20classic%20Greek%20casserole,%20perhaps%20the%20most%20well-known%20of%20all%20Greek%20dishes%20(could%20even%20be%20the%20brand%20ambassador%20of%20Greek%20cuisine!).%20It%20is%20a%20little%20more%20elaborate%20than%20the%20other%20dishes%20featured%20on%20this%20blog,%20but%20let%20me%20tell%20you%20that%20the%20effort%20it%20takes%20is%20well%20worth%20it.%20Make%20it%20on%20those%20nights%20that%20you%20have%20more%20time%20and%20are%20relaxed-it%20might%20take%20about%2030%20minutes%20to%20an%20hour%20to%20prepare,%20and%20then%2030%20minutes%20in%20an%20oven.%3C/p%3E%3Cp%3EI%20am%20in%20no%20way%20claiming%20that%20this%20is%20the%20original%20or%20classic%20moussaka%20recipe.%20If%20you%20search%20on%20the%20net%20or%20even%20in%20cookbooks,%20you'll%20find%20many%20different%20ways%20of%20making%20it.%20This%20one%20is%20just%20the%20way%20my%20mother%20used%20to%20make%20it!%3C/p%3E%3Cp%3ETo%20serve%204%3C/p%3E%3Cp%3EFor%20non%20vegetarians:%3C/p%3E%3Cp%3EFor%20the%20brinjals-after%20they%20are%20cut,%20sprinkle%20salt%20on%20them%20and%20let%20them%20rest%20for%2015%20minutes%20(to%20drain%20out%20excess%20water%20and%20remove%20any%20bitterness).%20Then%20either%20deep%20fry%20them%20in%20hot%20oil%20or%20shallow%20fry%20them,%20until%20golden%20brown%20on%20both%20sides.%20Remove%20and%20place%20them%20on%20paper%20towels%20to%20drain%20out%20excess%20oil.%3C/p%3E%3Cp%3EFor%20the%20potatoes-after%20they%20are%20cut,%20either%20deep%20fry%20or%20shallow%20fry%20until%20golden%20brown%20on%20both%20sides.%20Drain%20on%20a%20paper%20towel.%3C/p%3E%3Cp%3EFor%20the%202%20large%20onions-after%20they%20are%20cut,%20shallow%20fry%20until%20golden%20brown%20and%20keep%20aside.%3C/p%3E%3Cp%3EFor%20the%20meat%20sauce-Heat%20oil%20in%20a%20pan.%20Tip%20in%20the%20garlic,%20fry%20till%20the%20garlicky%20smell%20wafts%20out.%20Add%20the%20onions%20(chopped%20fine)%20and%20fry%20till%20translucent.%20Then%20add%20the%20minced%20meat%20and%20fry%20till%20brown%20in%20color.%20Add%20the%20dried%20herbs,%20salt%20and%20pepper%20to%20taste%20and%20cook%20with%20the%20lid%20closed%20till%20the%20meat%20is%20done%20(you%20could%20also%20pressure-cook%20this%20for%2015%20to%2020%20minutes).%3C/p%3E%3Cp%3ETo%20make%20the%20bechamel%20sauce-Melt%20butter%20in%20a%20pan.%20Add%20the%20flour%20and%20stir%20around%20till%20a%20little%20brown.%20Then%20add%20the%20milk,%20salt%20and%20pepper%20to%20taste%20(add%20less%20salt%20if%20using%20salted%20butter).%20Make%20sure%20it%20doesn't%20become%20lumpy.%20It%20should%20be%20a%20nice%20creamy%20consistency.%20You%20could%20add%20cheese%20to%20this%20to%20make%20it%20a%20cheese%20sauce%20too.%3C/p%3E%3Cp%3ETo%20assemble-In%20a%20baking%20dish,%20assemble%20half%20the%20brinjals%20in%20a%20single%20layer,%20top%20with%20the%20meat,%20put%20the%20tomato%20puree%20in%20blobs%20over%20the%20meat,%20then%20top%20with%20the%20fried%20onions%20and%20potatoes,%20another%20layer%20of%20brinjals,%20meat,%20and%20tomato%20puree.%20Finally%20top%20with%20the%20bechamel%20sauce.%20Grate%20cheese%20on%20top.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20200%20C%20and%20bake%20for%2020%20to%2030%20minutes,%20until%20the%20cheese%20has%20melted%20to%20a%20golden%20brown.%3C/p%3E%3Cp%3EEnjoy%20this%20with%20a%20green%20salad%20and%20toasted%20bread%20(hot%20garlic%20bread%20would%20be%20wonderful).%3C/p%3E%3Cp%3EFor%20Vegetarians:%3C/p%3E%3Cp%3EInstead%20of%20the%20minced%20meat,%20use%20soya%20granules,%20soaked%20for%2010%20minutes%20in%20hot%20water%20and%20drained,%20then%20cook%20as%20for%20the%20meat%20sauce%20above.%20Layer%20with%20brinjals%20and%20potatoes.%3C/p%3E%3Cp%3EFor%20a%20full-on%20vegetarian%20version%20(recipe%20courtesy%20Neeraja%20chechi)-use%20a%20cup%20of%20mixed%20vegetables%20like%20carrots,%20cauliflower,%20mushrooms,%20tomatoes%20(no%20need%20to%20add%20tomato%20puree).%20Add%20a%20vegetarian%20stock%20cube%20and%20fry%20as%20for%20the%20meat%20sauce%20above%20(you%20could%20omit%20the%20soya%20granules).%20Layer%20with%20brinjals%20and%20potatoes.%3C/p%3E%3Cp%3EFor%20the%20calorie%20conscious:%3C/p%3E%3Cp%3EInstead%20of%20frying%20the%20potatoes%20and%20brinjals,%20bake%20at%20180C%20for%2015%20to%2020%20minutes%20or%20until%20brown.%3C/p%3E%3Cp%3ESubstitute%20zucchini%20for%20the%20brinjals.%3C/p%3E%3Cp%3EFor%20the%20time%20conscious:%3C/p%3E%3Cp%3EInstead%20of%20the%20meat%20being%20cooked%20from%20scratch%20for%20the%20meat%20sauce,%20use%20luncheon%20meat%20instead%20and%20just%20fry%20it%20using%20the%20procedure%20given.%20If%20you%20need%20a%20recipe%20for%20preparing%20luncheon%20meat,%20check%20out%20my%20Luncheon%20Meat%20Scramble%20(omit%20the%20eggs%20if%20making%20the%20moussaka%20with%20it%20though).%20One%20of%20my%20friends,%20Renisha,%20made%20this%20with%20canned%20tuna%20instead%20and%20said%20it%20was%20just%20as%20delicious.%20Try%20it%20out%20that%20way%20too%20for%20a%20change,%20but%20you%20just%20might%20have%20to%20change%20the%20name%20to%20something%20else%20:-)%3C/p%3E%3Cp%3EAnd%20the%20pie%20goes%20to:%3C/p%3E%3Cp%3EI%20am%20linking%20this%20to%20the%20blog%20party%20@:%3C/p%3E){kind=link}
