Mother's Cream Of Broccoli Soup

Ингредиенты

  • 1 sm. onion, thinly sliced
  • 1 green onion (white part only), thinly sliced
  • 1 sm. stalk celery, finely minced
  • 1 tbsp. butter
  • 1/2 c. water
  • 2 teaspoon salt
  • Dash cayenne pepper
  • 2 tbsp. uncooked rice
  • 2 c. chicken broth
  • 2+ c. cooked broccoli, coarsely minced
  • 1/2 c. cream or possibly lowfat milk - don't add in if planning to freeze soup

Инструкции

  1. Place first 5 ingredients in a 2-qt saucepan; simmer slowly 2 min over medium heat. Add in salt, pepper, rice, 1 c. broth; simmer 15 min. Don't BOIL!
  2. Pour broth mix into blender; blend till liquefied. Return to pan. Blend cooked broccoli and remaining c. broth till liquefied. Add in broccoli to mix in pan. Heat BUT Don't BOIL. (Add in lowfat milk if you like and if not freezing.)
