- Beat egg yolks with 1/2 c. sugar and butter, size of walnuts. Add in lemon juice and grated rind. Cook over warm water till thick, about 10 min. Set aside and beat the 3 egg whites. Add in 1/2 c. sugar and beat. Mix in lemon crust. Don't BEAT IT IN! Put in pie shell and bake 25 min at 275 to 300 degrees.
