%208%20cups%20picked%20in%20about%2015%20minutes!%20I%20love%20it.%20So%20I%20do%20have%20plans%20to%20make%20some%20of%20the%20expected%20jelly%20and%20pies...can't%20do%20without%20those!%20But%20I've%20also%20been%20looking%20for%20some%20other%20things%20to%20do%20with%20my%20abundance.%20I%20was%20searching%20salads%20and%20when%20I%20hit%20on%20this%20Blackberry%20Chicken%20Salad%20I%20knew%20I%20had%20to%20try%20it.%3C/p%3E%3Cp%3EThis%20is%20apparently%20the%20signature%20salad%20at%20an%20Atlanta%20restaurant%20called%20Sycamore%20Grill.%20I%20have%20never%20been%20there,%20but%20I%20guarantee%20you%20that%20if%20I%20ever%20find%20myself%20there%20I%22ll%20be%20ordering%20this%20salad.%3C/p%3E%3Cp%3EThis%20recipe%20is%20really%20three%20in%20one%20and%20you%20could%20make%20only%20one%20or%20all%20three%20and%20not%20go%20wrong,%20but%20I'd%20suggest%20at%20least%20making%20the%20chicken%20salad%20part...I%20almost%20stopped%20there%20when%20I%20tasted%20how%20good%20it%20was.%20But%20if%20you%20have%20time%20go%20for%20all%20three.%20The%20dressing%20for%20the%20greens%20is%20wonderful%20and%20I%20have%20plenty%20left%20over%20for%20future%20salads.%20And%20the%20nuts%20will%20be%20great%20later%20on%20some%20ice%20cream.%3C/p%3E%3Cp%3EBlackberry%20Chicken%20Salad%3C/p%3E%3Cp%3EFrom%20Sycamore%20Grill,%20Atlanta%3C/p%3E%3Cp%3EFound%20HERE%20at%20EveningEdge.com%3C/p%3E%3Cp%3ETo%20make%20the%20caramelized%20nuts:%20Preheat%20oven%20to%20375%20degrees.%20In%20a%20saucepan,%20combine%20nuts,%20cinnamon,%20sugar%20and%20salt%20and%20cover%20with%20water.%20Bring%20to%20a%20boil%20and%20simmer%20for%2020%20minutes.%20Drain%20the%20liquid%20from%20the%20nuts%20and%20pat%20dry.%20Place%20nuts%20in%20a%20single%20layer%20on%20a%20baking%20sheet.%20Bake%20for%2012%20to%2015%20minutes%20or%20until%20crunchy,%20tossing%20after%2010%20minutes%20for%20even%20cooking.%3C/p%3E%3Cp%3ETo%20make%20the%20chicken:%20In%20a%20saucepan,%20poach%20chicken%20until%20just%20cooked%20through.%20Cool%20and%20dice.%20Mix%20with%20green%20onions%20and%20celery.%20In%20a%20separate%20bowl,%20combine%20mayonnaise,%20honey%20and%20mustard.%20Add%20the%20blackberries.%20Gently%20add%20blackberry%20mayonnaise%20to%20chicken,%20just%20until%20moistened.%20Add%20salt%20and%20pepper%20to%20taste.%3C/p%3E%3Cp%3ETo%20make%20the%20vinaigrette:%20In%20a%20small%20saucepan,%20bring%20wine,%20sugar,%20mustard,%20garlic%20and%20shallots%20to%20a%20boil.%20Reduce%20heat%20to%20medium%20for%205%20minutes,%20or%20until%20reduced.%20Transfer%20mixture%20to%20a%20blender%20and%20add%20vinegar,%20blackberries,%20honey%20and%20salt%20and%20pulse%20to%20combine.%20Slowly%20add%20the%20oil,%20while%20the%20blender%20is%20running,%20to%20emulsify.%3C/p%3E%3Cp%3EToss%20mixed%20greens%20with%20enough%20vinaigrette%20to%20moisten.%20Top%20with%20a%20scoop%20of%20chicken%20salad%20and%20sprinkle%20with%20caramelized%20nuts.%20I%20halved%20the%20recipe%20and%20it%20made%202%20very%20large%20main%20entree%20salads%20or%204%20smaller%20side%20salads.%3C/p%3E%3Cp%3EFor%20my%20Mosaic%20Monday%20contribution%20I%20did%20this%20Lacecap%20Hydrangea%20mosaic%20showing%20it%20from%20bud%20to%20bloom.%20I'm%20always%20amazed%20at%20the%20end%20product%20:-)%20Check%20out%20all%20of%20the%20other%20great%20mosaics%20HERE%20at%20Little%20Red%20House.%3C/p%3E){kind=link}
