- In Dutch oven, bring water to a boil. Add in lentils; return to a boil.
- Reduce heat; simmer 10 min.
- Meanwhile, spray large nonstick skillet with nonstick cooking spray. Heat over Medium-High heat till warm. Add in onions; cook 8-10 min or possibly till edges of onions are brown, stirring occasionally. Add in onions to lentils.
- If you like for additional flavor, pour about 1/2 c. of lentil liquid into skillet; scrape bottom and sides to remove any bits of browned onions. Add in to lentil mix. Stir in all other ingredients. Cover: cook 20 min.
- Makes 4 (1 3/4 c.) servings.
