Free-range eggs, smoked bacon, morels, ramps and sharp cheddar cheese combine for a savory breakfast or brunch

Morel mushrooms & fresh wild leeks (ramps) grace the frittata garnished with ramps leaves
Cleaned and trimmed, ramps remind one a bit of green onions - but have a very wonderful onion/garlic flavor
The broad, flat, tender leave have a subtle and delicious peppery flavor
There is no flavor like that of wild leeks
We render and dice the bacon and slice the ramps bulbs and stems
Carefully arrange the sliced morels on top of the egg mixture
Roll up and julienne the ramps leaves for garnish
