%20Market%20here%20in%20Ft.%20Wayne%20and%20brought%20home%20fresh%20grown,%20fresh%20picked%20eggplant.%20Since%20then%20Alex%20requests%20%20my%20Eggplant%20Parmesan%20about%20once%20a%20month.%20I'm%20happy%20to%20oblige%20him%20as%20long%20as%20I%20can%20find%20it%20as%20fresh%20looking%20as%20they%20did%20that%20day.%20And%20let's%20face%20it,%20in%20the%20middle%20of%20winter,%20that's%20not%20always%20possible%20at%20our%20local%20grocery%20stores.%20Ironically%20enough,%20last%20week%20at%20the%20store%20Alex%20and%20I%20saw%20eggplant%20that%20looked%20pretty%20good%20and%20I%20bought%20one.%20Where's%20the%20irony%20you%20ask?%20The%20next%20day%20they%20ventured%20to%20the%20market%20again%20only%20to%20find%20eggplant%20one%20of%20the%20few%20veggies%20available!%20Oh%20well.%20The%20one%20I%20got%20from%20the%20produce%20section%20really%20is%20one%20of%20the%20better%20ones%20I've%20seen%20outside%20a%20farmer's%20market/stand.%20Now%20what%20Alex%20doesn't%20know%20yet%20is%20that%20it's%20not%20going%20to%20be%20used%20in%20that%20dish%20he%20craves%20so%20much.%20Instead,%20I%20have%20a%20recipe%20I%20found%20and%20have%20been%20waiting%20to%20try%20since%20probably%20March!%20Lol%20I%20love%20planning%20meals%20based%20around%20all%20the%20beautiful%20things%20found%20in%20the%20garden%20during%20the%20summer%20months,%20and%20anything%20I%20can%20hollow%20out%20and%20stuff---yeah%20it's%20my%20friend!%20I%20think%20eggplant%20is%20one%20of%20the%20most%20underused%20veggies%20out%20there%20and%20it%20is%20a%20shame%20b/c%20it%20has%20wonderful%20flavor,%20sweet,%20and%20almost%20nut%20like%20depending%20on%20how%20it's%20prepared.%20Plus%20it's%20one%20of%20those%20foods%20that%20absorb%20flavors%20so%20easily,%20so%20it's%20a%20great%20way%20to%20experiment%20w/%20different%20herbs,%20spices,%20rubs,%20marinates,%20etc.%20Earth%20provides%20us%20w/%20so%20many%20beautiful%20options%20in%20the%20summer%20w/%20all%20the%20fresh%20fruits%20and%20veggies,%20get%20out%20there%20and%20take%20advantage%20of%20it%20while%20you%20can!%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350.%20Scoop%20out%20flesh%20of%20the%20eggplant,%20chop%20and%20reserve.%20Coat%20shells%20w/%20olive%20oil%20and%20season%20w/%20salt%20and%20pepper;%20set%20aside.%20Heat%201/4%20c.%20oil%20in%20large%20skillet%20over%20medium%20heat.%20Saute%20sausage%20and%20garlic%20until%20brown.%20Drain.%20Stir%20in%20reserved%20eggplant%20and%20mushrooms.%20Saute%20until%20a%20little%20soft%20and%20mushrooms%20have%20browned%20a%20bit.%20Season%20w/%20salt%20and%20pepper.%20Pour%20in%20broth%20and%20cook%205%20minutes.%20Add%20bread%20crumbs%20and%201/4%20c.%20cheese.%20If%20mixture%20seems%20dry,%20stir%20in%20a%20little%20more%20broth.%20Stuff%20shells%20and%20sprinkle%20w/%20Parmesan%20cheese.%20Bake%20for%2030-40%20minutes%20until%20tender.%20Serve%20w/%20a%20simple%20green%20or%20Caesar%20salad.%3C/p%3E%3Cp%3E*NOTE*%20The%20portion%20pictures%20was%20enough%20for%20Alex%20and%20I%20both.%20The%20next%20time%20I%20make%20this%20I'm%20going%20to%20try%20smaller%20eggplants%20for%20a%20more%20%22personal%22%20portion.%3C/p%3E){kind=link}
