Рецепт Mom's Homemade Vegetarian Meatballs #Sunday Supper
This week for #SundaySupper it's all about unprocessed foods. The definition of "unprocessed" can be intrepreted differently by many people. To me it is homemade food made with whole ingredients that have not been through a process of preservatives. My Mom's Vegetarian Meatballs fit this bill quite nicely for me.
While my mom was a vegetarian, my dad was not. So, we always had a great variety in our home. I admit, my preference was the vegetarian food. To this day I crave things my mother made more than I ever crave a steak.
These meatballs are made with whole, unprocessed ingredients. You can serve these with a homemade tomato sauce or a homemade mushroom gravy. Both ways are very delicious! They are made with nut meal, eggs, cheese, bread crumbs or crushed crackers and seasoning then baked or fried. I choose to bake mine to elimiate the grease factor.
For anyone who is not a meat eater, and you think that these meatballs would just not cut it for you, I need to let you know that my die hard meat and potato husband came into the kitchen when I was making these. His words....and I am not going to exactly quote because they weren't so kosher...were: "I had to come out to the kitchen because something smells *expletive* good!" Case closed. :) He had done himself in because he just told me my vegetarian meatballs smelled good so I could tell him what it was. After saying those words, he had no choice but to eat them. ;)

Mom's Vegetarian Meatballs

Ingredients
- 6 eggs, well beaten
- 1 cup pecan meal
- 1 small onion, finely diced
- 1 tablespoon butter
- 1 tablespoon almond butter
- 1/2 teaspoon salt
- 1 black garlic clove, diced
- 1 teaspoon gravy master
- 2 cups italian flavored bread crumbs
- 1-1/2 cups shredded cheddar cheese
Instructions
Whisk together eggs, pecan meal and cheese. Set aside.
Saute onion and garlic in 1 tablespoon butter until onion softens and garlic starts to dissolve. Stir in 1 heaping tablespoon almond butter. Remove from heat and let cool about 5 minutes.
Stir onion mixture into egg mixture until combined. Then stir in bread crumbs or crackers. The mixture should be thick enough to scoop with a small cookie scoop. Scoop onto a foil lined cookie sheet that has been sprayed with cooking spray. Spray tops of meatballs with cooking spray and bake at 350 degrees for 15 minutes. Turn meatballs over and bake another 10-15 minutes. Serve with your favorite sauce.
