Рецепт Mom’s Buttermilk Biscuits #SundaySupper
by Grumpy's Honeybunch

A tender buttery biscuit with a slightly crisp outer layer, fluffy, hot and steamy on the inside. Mom’s Buttermilk Biscuits have always been the best biscuit I have ever eaten.

Lets face it. Biscuits aren’t a meal, but believe me, I could make them one! Just slather with some butter and honey, give me some hot coffee and I’m good to go! These biscuits are much better than the ones you will ever get in a can. I haven’t bought those in a really long time, but aren’t they like $3.00 for a can of biscuits? Forget that! I don’t like the preservative taste you get with those. I’d much rather have my mom’s recipe!

This week Caroline of Caroline’s Cooking and I are hosting Sunday Supper and the Family is sharing Budget Friendly Recipes with you. Let’s get back to homemade, which is always better on both the wallet and the diet!

For my yearly fall trip to Dad and Mom’s I was wondering what Mom could make for me to blog that I love but am not so great at making myself. I’d been thinking about Chicken and Biscuits for several weeks and that is when it hit me. I could document Mom’s biscuit making skills and maybe, just maybe, when I get home I can attempt to make them myself and do just as good!

I cannot believe I have not posted this recipe before today. December 27, 2015 will be 8 years since I started writing this blog. In all of those years, I have referenced several times about how terrible my biscuit making skills are. The biscuits themselves do not taste terrible, but rather, they never seem to be as gorgeously fat and fluffy like my Mom’s are.

There is something about going home in the fall that brings me comfort. Maybe its the fact the wood stove is usually going making the home cozy. It is a joke around here that Mom likes to “sweat us out of the house.” I love the coziness of the fire, the crisp air outside, and the home cooked food that goes along with the family bonding. I just have to take short sleeved shirts when I visit. The poor woman is teased relentlessly about the sauna she creates. I sure do love my mom and I am so lucky to have her in my life! Fortunately, she still loves all of us despite the teasing we give her!

Now, back to those biscuits! Mom uses a recipe from the Better Homes & Garden’s Cookbook, but she makes her own version of it and it has changed throughout the years! When I was a young girl, she used Crisco. As things have progressed over the years, Dad and Mom have moved on to other “fat” alternatives and they now use Smart Balance. You do not have to run right out and buy Smart Balance for this recipe, it is just what they use in their home. If you have shortening and/or butter then your good to go. Use a combination of both or just one of them. Use what you have in your house, you will be fine.

I want to share with you some things that my Mom told me as she was making these biscuits. I wanted to be sure that when I made these, or any of you would make these, that you were as successful as she is!

Tip #1 – the recipe calls for regular milk. Mom changes it to buttermilk and adds baking soda to the recipe. The baking soda reacts with the buttermilk to produce those little CO2 bubbles for leavening. She only adds 1/2 teaspoon to the recipe, otherwise it would have an off taste. She also only uses King Arthur Flour when baking.

Tip #2 She always uses her hands to turn the butter and flour mixture into little pea sized crumbles and she works quickly.

Tip #3 do not use a rolling pin! Pat the dough down and don’t overwork it.

Tip #4 lie them close together on the baking sheet and no need to grease the sheet or put parchment paper on it. You want them to have a little bit of a crispy bottom and you will get it this way!

Tip #5 is my favorite tip ever and it came from my son Justin who learned from my mom. As soon as they come out of the oven, taste it to make sure it is good. I love how these great tips are passed down to generations!

Before I end my post today, I must share with you the photo of Mom and Justin. Justin is my oldest son and is also my “blog boss”! He is the person behind my new site and is also my post editor, if I can get a post done with enough time for him to edit. I’m so proud of this boy, my first born, and all that he is capable of. Most importantly, he is helping make and preserve these family recipes and memories for me. I can’t thank him enough for loving his mom and supporting me with my passion!

Mom's Buttermilk Biscuits 1 biscuit cost approximately .25 cents. 8 biscuits would cost approximately 2.00. Cheaper than store bought and far better! Author: Grumpy's Honeybunch Serves: 8 biscuits Ingredients

3 cups flour (sift flour before measuring) 1 tablespoon baking powder ½ teaspoon baking soda 1 teaspoon salt 1 tablespoon sugar ¾ teaspoon cream of tartar ½ cup butter 1 cup buttermilk Instructions

Preheat oven to 450. In large mixing bowl stir together the flour, baking powder, baking soda, salt, sugar, and cream of tartar. Using a pastry blender or your hands (as mom recommends) quickly cut the butter into the flour mixture until it resembles pea like crumbs. Make a well in the center of your flour and butter mixture. Add the buttermilk and stir until just combined. Turn dough out onto floured board. Knead 5-6 times to bring dough together. Flatten to about 1" thick using your hands. Cut with a biscuit cutter and place on baking sheet, being sure to have the biscuits touch each other slightly. Bake 10-14 minutes or until biscuits are golden. 3.5.3208
