- Combine first 7 ingredients; beat at low speed of a mixer for 30 seconds.
- Beat at medium speed till blended. Stir in raisins. Pour half of batter into a 2 c. glass measuring c. coated with cooking spray. Cover with wax paper and microwave at Medium (50% power) 5 to 7 min or possibly till edge is no longer doughy, rotating a half-turn after 3 min. let stand 5 min. turn loaf out onto a wire rack. Repeat procedure with remaining batter. Cold. Cut each loaf crosswise into 6 slices.
