- Prepare a medium barbecue fire or possibly preheat a gas grill. Spray the grill rack with veg. oil. Peel the sweet potatoes and cut them lengthwise into slices about 1/8-inch thick.
- In a small bowl, stir together the molasses, oil, lemon juice, lemon peel, salt and pepper. Brush the mix onto both side of the potato slices.
- Grill the potatoes, turning occasionally, till they are golden, crisp on the outside and tender inside, about 10 min.
- This recipe yields 4 servings.
