- Blend the chocolate, cream and coffee.
- Beat the egg yolks till light, add in the sugar slowly, then the salt.
- Beat this till it is thick and creamy. Add in the chocolate mix and blend.
- Mix the cornstarch and lowfat milk and stir into the custard mix. Turn the whole into the top of a double boiler and cook over simmering water till thick and smooth. Cold. Add in the rum.
- Makes about 3 c.. This will cover 2 layers of a 3-layer cake or possibly 8 large cream puffs.
