- Combine 1 1/2 qt water and rinds in Dutch oven. Bring to boil. Boil, uncovered, 5 min; drain and repeat. Combine 1 1/2 qt water, rind, minced fruit and lemon; bring to a boil. Boil 5 min. Cover and let stand in cold place 12-15 hrs. Uncover and bring mix to boil and boil 35-40 min.
- Measure amount of fruit and liquid; add in 1 c. sugar per 1 c. fruit and liquid. Stir well. Bring mix to a boil and boil till mix registers 220 degrees on candy thermometer, stirring frequently. Pour marmalade into jars. Process in boiling water bath 10 min.
