Gluten Free Mix It Up Monday
One of the things we missed the most when we switched to gluten free life is Chinese dumplings or potstickers. The ones we love are absolutely a labor OF love, backbreaking and time consuming and SO WORTH IT. Given the easy tearing nature of gluten free dough, I thought that they were out of our reach. Then I found The Gloriously Gluten Free Cookbook, which I bought expressly because there was a recipe for potstickers listed in the index (pg. 114). It’s taken me months to get around to trying it.

.%20%20It%E2%80%99s%20taken%20me%20months%20to%20get%20around%20to%20trying%20it.%3C/p%3E%3Cp%3EI%20had%20a%20few%20issues%20with%20this%20recipe.%20%20For%20one,%20it%20calls%20for%20SIX%20EGGS%20in%20only%2024%20dumpling%20wrappers.%20%20That%E2%80%99s%20ludicrous.%20%20I%20found%20the%20dough%20incredibly%20difficult%20to%20roll%20out,%20and%20of%20course%20it%20didn%E2%80%99t%20really%20stretch.%20%20Once%20I%20finally%20got%20the%20dumplings%20wrapped%20(and%20I%20used%20my%20original%20filling%20from%20the%20recipe%20linked%20above),%20which%20only%20used%20half%20the%20filling%20btw,%20I%20followed%20the%20cookbook%E2%80%99s%20advice%20for%20how%20to%20cook%20them.%20%20Promptly%20burned%20the%20entire%20first%20batch%20(about%20half%20the%20dumplings).%20%20Went%20back%20to%20cooking%20them%20the%20way%20that%20I%20cooked%20my%20regular%20dumplings%20and%20those%20turned%20out%20better.%20%20The%20wrappers%20themselves%20were%20a%20little%20bit%20gummy%20and%20thick,%20not%20unpalatable%20but%20not%20at%20all%20what%20I%20associate%20with%20dumplings.%3C/p%3E%3Cp%3EI%E2%80%99m%20thinking%20I%E2%80%99ll%20be%20continuing%20the%20hunt%20for%20a%20viable%20gluten%20free%20dumpling%20wrapper,%20but%20this%20was%20enough%20to%20give%20me%20hope%20that%20it%20CAN%20BE%20DONE!%3C/p%3E%3Cp%3ENow,%20as%20I%20said,%20I%20had%20the%20other%20half%20of%20the%20filling%20remaining%20to%20do%20SOMETHING%20with.%20%20So%20for%20lunch%20the%20next%20day,%20I%20chopped%20another%203%20scallions,%20finely%20diced%20another%203%20leaves%20and%20stalks%20of%20bok%20choy,%20added%20another%20teaspoon%20of%20tamari%20and%20a%201/2%20teaspoon%20fresh%20ginger,%20and%20sauteed%20the%20pork%20until%20cooked%20through.%20%20Then%20I%20pulled%20out%20the%20package%20of%20rice%20paper%20wrappers%20I%20bought%20FOREVER%20ago%20and%20forgot%20about,%20soaked%20them%20according%20to%20package%20directions%20and%20filled%20each%20one%20with%201/3%20cup%20of%20filling%20and%20rolled%20them.%20%20I%20brushed%20them%20all%20with%20oil%20and%20baked%20them%20at%20425%20for%2020%20minutes.%20%20They%20were%20quite%20tasty%20as%20a%20gluten%20free%20alternative%20to%20egg%20rolls,%20though%20definitely%20flimsier.%20%20They%20kind%20of%20fell%20apart%20when%20we%20ate%20them,%20but%20it%20was%20still%20a%20tasty%20and%20simple%20use%20for%20the%20remaining%20filling.%3C/p%3E%3Cp%3ETAGS:Mix%20It%20Up%20Monday%3C/p%3E){kind=link}
