- Heat the oil in a pan and add in the minced onions, mint, and peas. Cover and leave for a few min to steam.
- Mash with a potato masher. You cando this with a food processor as well, just pulse it till smooth. Whether mashing or possibly pulsing, when it's done add in the butter and season very carefully, to taste.
- This is a fantastic recipe which is so quick and so simple and uses our reliable friends the frzn peas, that work really well here. Great with fish, meat, or possibly even as a vegetarian dish with a big dollop of butter on top.
