  • 3 c. Fresh mint (spearmint is a good choice) leaves, washed and dry
  • 4 x Garlic cloves
  • 1/2 c. Pine nuts
  • 1 x Lemon , Juice of
  •     Salt and freshly grnd black pepper, to taste
  • 1 c. Extra virgin olive oil
  • 3/4 c. Freshly grated Parmesan

  1. Combine mint, garlic and pine nuts in the work bowl of a food processor.
  2. Blend to a fine paste, scraping down the sides of the bowl as necessary.
  3. Add in lemon juice, salt and pepper and cheese. With machine running, pour oil through feed tube in a slow steady stream. Process till smooth.
