- 12 oz (1 1/2 cups, 3 sticks) unsalted butter, room temperature
- 4 oz (1 cup) sifted confectionersâ sugar
- 1 T vanilla
- 1/2 t salt
- mint chocolate filling:
- 8 oz semisweet chocolate, chopped
- 3 oz (6 T) unsalted butter, sliced into pats
- peppermint oil to taste (what I used) or 1/4 t peppermint extract
