Рецепт Mint and spring onion Carrot Salad
Ingredients
- 2 Cups Julienne carrots
- 2 stems Spring onions, green and white chopped
- 1 Tbsp Peanuts, roasted
- 2 Tbsp Finely chopped Mint leaves
- 2 Tbsp Olive Oil
- 1-2 Tbsp Honey as per sweetness required
- 2 Tbsp Lime Juice
- Salt and Pepper for seasoning
Instructions
Prepare the dressing by mixing oil, lime juice, honey and mint. Whisk it well.
In a serving bowl add the carrots and chopped spring onions and pour the dressing on top. Allow it to sit for 5-10 minutes or you can also refrigerate it if you like a cold salad.
Just before serving add salt and pepper. Sprinkle the roasted peanuts and some more mint leaves on top.
