You all know I'm a huge

fan of individual desserts. These are perfect for a small group of people and

the presentation is so pretty because they don't need to be cut to be served.

There are so many different fun ways to mix up this recipe. I kept thinking of

ideas as I was making them. It's almost fall, which is super exciting for me. I

love fall because of all of the flavors that typically accompany it. These

adorable little cakes have just a hint of apple flavor in them and a soft spice

flavor reminiscent of autumn.

There are some really

exciting things going on with me right now. The first yay! As many of you may

(or may not, I know you're busy too) have noticed I have been posting less than

I used to. It's not on purpose. I sure enough love baking and sharing it with

all of you! I feel like I'm joining the masses here, but I am pregnant.

Therefore, I've been having some problems baking more because I haven't felt

like eating anything. I'm starting to feel better though and am becoming

excited about baking on a regular basis again. I am about 14 weeks in and am

due in March. We are super excited and our son just wants to know when the baby

can play. It will be a while...

The other yay! In other

news I was featured in a back-to-school cookbook with Foodie.com. I am one of

29 bloggers that have recipes published in it! You can check it out here. It's a free e-cookbook and there are some amazing

recipes from awesome bloggers. I am completed honored to be part of a cookbook

with such talented bloggers.The idea of the cookbook is that the recipes

involve 10 ingredients or less and are quick and easy to prepare. There are so

many recipes in there that look absolutely delicious and I just want to start

cooking them right now! My recipes are on pages 22 and 112. I had so much fun

creating recipes and taking the pictures for the cookbook. Check it out and let

Oh you want to know about

the cute little spice cakes too? I had some fun ideas for those while I was

making them. They would be delicious with some finely chopped apple tossed into

the batter or you could top the finished cake with some caramel sauce if you

would like. The cake is nice and moist but it would also be delicious with a

side of ice cream, I was thinking pumpkin? It is the season for it, well

almost. Happy Baking!

Mini Spice Cakes

Makes 6 mini bundt cakes

Ingredients:

Directions:

1. Preheat the oven to 350F. Grease 6 mini bundt pan

cups, set aside.

2. In a large bowl mix together the brown sugar,

butter, and egg until smooth. In a medium bowl mix together the dry ingredients

from flour-salt until blended.

3. Add half of the flour mixture to the butter

mixture, stirring well. Slowly add the milk, stirring slowly to blend (so it

won’t splash). Add the remaining flour mixture and stir until it is completely

blended.

4. Evenly distribute the batter into the pans. Bake

for 30 minutes or until a toothpick inserted into the cake comes out clean.

Cool 10 minutes then remove from pan. Cool completely on a wire rack.
