.%20%20I%20realized%20how%20badly%20out%20of%20shape%20I%20was;%20or%20maybe%20I%20must%20be%20old!%20It%20was%20snowing%20pretty%20much%20all%20day%20and%20the%20visibility%20wasn't%20that%20great.%20Surprisingly,%20there%20were%20a%20lot%20of%20people%20that%20day.%20Aside%20from%20snowboarding,%20we%20might%20have%20a%20snow%20storm%20today%20or%20tomorrow%20in%20Seattle.%20Yikes!%3C/p%3E%3Cp%3EHow's%202011%20treating%20you%20so%20far?%3C/p%3E%3Cp%3EBack%20to%20the%20food,%20these%20mini%20cups%20are%20elegant%20but%20surprisingly%20easy%20to%20make.%20They%20are%20so%20good%20that%20I%20made%20them%20twice%20-%20first%20batch%20for%20the%20Christmas%20Party%20with%20the%20in-laws%20and%20the%20second%20for%20the%20New%20Year's%20Eve%20party%20that%20I%20hosted.%20They%20are%20crowd%20pleasers;%20I%20can%20guarantee%20you%20that.%20The%20bite%20size%20is%20adorable%20and%20makes%20them%20go%20fast!%3C/p%3E%3Cp%3EAs%20far%20as%20the%20cupcakes%20(recipe's%20here),%20my%20friends%20loved%20them.%20They%20are%20so%20cute.%20I%20also%20boxed%20them%20as%20a%20gift%20for%20friends%20who%20couldn't%20make%20it%20to%20the%20party.%20I%20added%20a%20little%20vegetable%20shortening%20to%20thicken%20the%20frosting.%20Somehow%20my%20frosting%20was%20runny.%20I%20might%20have%20accidentally%20added%20too%20much%20powdered%20sugar-oops.%3C/p%3E%3Cp%3EPatty%20asked%20me%20how%20I%20liked%20the%20cake.%20I%20tweaked%20it%20to%20a%20green%20tea%20cake,%20so%20I%20cut%20out%20chocolate%20and%20cocoa%20powder%20and%20added%201%20full%20tsp%20of%20matcha%20green%20tea%20powder.%20It%20was%20good,%20especially%20eating%20it%20with%20a%20cup%20of%20hot%20tea.%20Next%20time,%20I%20will%20have%20to%20cut%20out%20the%20caramel%20part%20since%20it%20was%20too%20sweet%20for%20my%20taste%20buds%20(recipe%20is%20here).%20I%20didn't%20use%20a%20cast%20iron%20pan%20but%20used%20a%20cake%20pan%20instead.%20It%20worked%20fine.%3C/p%3E%3Cp%3ERoxan's%20pretzels%20are%20super%20easy%20and%20adorable!%20I%20didn't%20have%20Hershey's%20so%20I%20used%20what%20I%20had%20on%20hand%20-%20Reeses%20cups.%3C/p%3E%3Cp%3EThanks%20for%20the%20awesome%20recipes%20you%20guys!%3C/p%3E%3Cp%3EOther%20than%20that,%20I%20made%20the%20beverage%20that%20I%20had%20submitted%20to%20Denise's%20and%20Lazaro's%20Cocktail%20Contest.%20This%20time%20I%20used%20pomegranate%20and%20cranberry%20juice.%20Over%20all%20the%20party%20was%20a%20success.%20Everyone%20was%20happy%20and%20full.%20Celebrating%20with%20good%20company%20and%20good%20food%20was%20a%20great%20way%20to%20start%20year%202011!%3C/p%3E%3Cp%3EBrush%3C/p%3E%3Cp%3EMini%20muffin%20tray%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EIf%20you'd%20like%20to%20make%20it%20ahead%20of%20time%20so%20that%20you%20won't%20have%20to%20be%20too%20busy%20on%20the%20day%20of,%20you%20can%20chop%20all%20the%20herbs%20and%20vegetables%20in%20a%20separate%20containers.%20The%20mayo%20mixture%20in%20another%20container.%20On%20the%20day%20of,%20bake%20the%20gyoza%20skins,%20mix%20the%20mixture%20and%20everything%20else%20together.%20Fill%20the%20cups%20before%20serving.%3C/p%3E%3Cp%3EI%20used%20cooked%20shrimp%20instead%20of%20crab%20meat%20but%20you%20can%20change%20to%20any%20kind%20of%20seafood%20you%20like.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20F.%20The%20recipe%20calls%20for%20375%20F%20but%20I%20find%20it's%20too%20hot%20and%20sort%20of%20burns%20the%20gyoza%20skins.%20I%20decrease%20the%20temperature%20and%20increase%20time.%3C/p%3E%3Cp%3EMix%20mayonnaise,%20lime%20juice,%20Worcestershire%20sauce,%20and%20black%20pepper.%3C/p%3E%3Cp%3EMix%20celeray,%20tomato,%20chives,%20jalapeno,%20zest,%20and%20shimps%20in%20another%20bowl.%3C/p%3E%3Cp%3EMix%20the%20mayonnaise%20mixture%20into%20shrimp%20mixture;%20refrigerate.%3C/p%3E%3Cp%3EPrepare%20the%20gyoza%20skin.%20Combine%20water,%20honey,%20and%20oil%20in%20a%20small%20bowl.%3C/p%3E%3Cp%3EBrush%20gyoza%20skin%20one%20at%20a%20time%20with%20the%20water%20mixture%20on%20both%20side.%3C/p%3E%3Cp%3EPlace%20it%20on%20a%20mini%20muffin%20tray;%20pressing%20it%20firmly%20into%20base%20of%20cups.%3C/p%3E%3Cp%3ERepeat%20it%20until%20you%20fill%20the%20tray.%3C/p%3E%3Cp%3EBake%20at%20350%20F%20for%2015%20mins%20or%20until%20golden%20brown.%20When%20it's%20close%20to%2015%20mins,%20check%20the%20cups%20if%20they%20are%20not%20burn%20and%20adjust%20the%20time%20accordingly.%3C/p%3E%3Cp%3ECool%20in%20pans%20on%20a%20wire%20rack.%20Carefully%20remove%20cups%20from%20pans.%3C/p%3E%3Cp%3EFill%20each%20up%20with%20the%20shrimp%20mixture%20and%20serve.%3C/p%3E){kind=link}
