- Here is the recipe I used for the tarts (tartlets). Itâs adapted from the pecan tart recipe at cooks.com
- PECAN TARTS
- TARTS
- 2 sticks butter softened to room temperature
- 6 oz. cream cheese, softened
- 2 c. plain flour
- Mix thoroughly; put in refrigerator to cool. Once cooled, shape into balls about 1 inch diameter.
- FILLING
- 2 eggs
- 1 1/2 c. brown sugar
- Dash salt
- 2 tbsp. softened butter
- 1 1/2 - 2 tsp. vanilla
- 1 c. chopped pecans

.%20%20I%20finalized%20the%20menu%20and%20shopped%20on%20Monday%20and%20then%20began%20the%20baking.%20Yesterday%20was%20peanut%20butter%20chocolate%20kiss%20cookies%20and%20simple%20sugar%20cookies%20(Alton%20Brown)%20that%20will%20be%20filled%20with%20raspberry%20jam%20and%20dusted%20with%20powdered%20sugar%20(a%20multi%20step%20cookie%20creation%20based%20on%20what%20I%20have%20in%20mind).%20Today%E2%80%A6%20mini%20pecan%20tarts%20and%20peanut%20butter%20fudge%20(also%20Alton%20Brown).%3C/p%3E%3Cp%3ENot%20long%20ago%20someone%20asked%20me%20if%20baking%20for%20a%20party%20was%20burdensome.%20%20No,%20not%20at%20all.%20%20I%20truly%20enjoy%20baking,%20not%20only%20at%20holidays,%20but%20anytime,%20and%20thus%20creating%20the%20baked%20goods%20for%20Friday%E2%80%99s%20Advent%20party%20is%20wonderfully%20relaxing.%20I%20do%20a%20little%20bit%20each%20day,%20plus%20Ken%20does%20so%20much%20to%20help%20and%20to%20cook%20(he%20made%20peanut%20butter%20fudge%20this%20evening)%20and%20thus%20it%E2%80%99s%20not%20nearly%20difficult%20as%20it%20might%20seem.%20The%20key%20really:%20%20Plan%20the%20work,%20work%20the%20plan.%3C/p%3E%3Cp%3EThe%20pecan%20tarts%20weren%E2%80%99t%20difficult%20at%20all,%20and%20I%20can%E2%80%99t%20wait%20to%20make%20them%20again.%20%20I%E2%80%99m%20eager%20not%20because%20we%E2%80%99ve%20already%20eaten%20them%20all,%20but%20because%20now%20I%20know%20a%20few%20tricks%20that%20I%20wish%20I%20had%20known%20before%20beginning.%3C/p%3E%3Cp%3ETip%201:%20Use%20enough%20dough%20that%20it%20can%20be%20pushed%20into%20the%20mini%20tart/muffin%20pan%20and%20up%20the%20sides%20so%20that%20there%20is%20just%20a%20little%20bit%20of%20a%20lip%20sticking%20up%20above%20the%20rim%20of%20the%20individual%20%E2%80%98cup.%E2%80%99%3C/p%3E%3Cp%3ETip%202:%20Don%E2%80%99t%20push%20your%20finger%20down%20into%20the%20dough%20and%20let%20it%20touch%20the%20bottom%20of%20the%20%E2%80%98cup'%20as%20doing%20so%20leaves%20a%20place%20thin%20enough%20for%20the%20filling%20to%20touch%20the%20metal%20pan%20and%20stick,%20making%20it%20nearly%20impossible%20to%20remove%20the%20tartlet%20from%20the%20pan.%3C/p%3E%3Cp%3ETip%203:%20When%20filling%20the%20tarts,%20don%E2%80%99t%20over%20fill.%20When%20the%20filling%20overflows%20the%20crust%20and%20touches%20the%20metal%20pan%20it%20sticks%20and%20a%20sticky%20tart%20is%20difficult%20to%20get%20out%20of%20the%20pan.%3C/p%3E%3Cp%3ETip%204:%20To%20remove%20the%20tarts%20from%20the%20pan,%20allow%20them%20to%20cool%20about%2015-20%20minutes,%20then%20gently%20turn%20the%20pan%20over%20and%20tap%20it%20gently%20on%20counter/cutting%20board.%20%20The%20tarts%20that%20aren%E2%80%99t%20stuck%20(see%20tip%203)%20will%20come%20out%20nicely.%3C/p%3E%3Cp%3ETip%205:%20Save%20any%20ugly%20tarts%20or%20tarts%20that%20did%20stick.%20%20Put%20them%20in%20a%20dish%20and%20pour%20cream%20over%20them.%20%20Saved!%3C/p%3E%3Cp%3ECombine%20all%20ingredients,%20except%20pecans.%20Beat%20until%20smooth.%20Spread%20crust%20balls%20into%20tart%20muffin%20tins.%20Drop%20half%20the%20pecans%20into%20tins.%20Add%20filling,%20almost%20to%20top.%20Drop%20remaining%20pecans%20on%20top.%20Bake%2025%20minutes%20(325%20degrees).%20Makes%2036%20tarts.%3C/p%3E%3Cp%3EThis%20recipe%20also%20multiplies%20easily.%20%20I%20made%20a%20recipe%20and%20a%20half%20and%20will%20likely%20make%20a%20double%20batch%20next%20time.%3C/p%3E%3Cp%3EI%20will%20likely%20serve%20them%20with%20regular%20cream%20and/or%20lightly%20sweetened%20whipped%20cream,%20though%20I%20can%20envision%20a%20few%20near%20a%20cookie%20plate%20as%20a%20two%20bite%20delight.%3C/p%3E%3Cp%3E~Enjoy!%3C/p%3E){kind=link}
