- Line muffin tins with foil liners.
- Place one vanilla wafer in each liner.
- With a paddle attachment on a stand mixer blend cream cheese, vanilla and sugar on medium speed until smooth. Scrape often.
- Add in eggs. Don't over mix. Get your lumps out before you add the eggs.
- Pour over wafers, filling 3/4 full.
- Bake 25 min at 325 degrees.
- Remove from pan when cold. Chill.
- Top with fruit, preserves, nuts or possibly chocolate. Be creative!
