Mini Calzones
This mini calzone recipe is one that I actually learned from my fiance, who learned it from his mama. It's a simple way to make appetizers/snacks for company, and it doesn't take that much time at all. Plus, you can pretty much customize it however you want.
You have to make sure you get the kind that isn't flaky.
The kind that Drew likes is the kind with pepperoni, but I made spinach ones for the Girls' Craft Night I threw over the weekend. So here we go!
Ingredients (makes 16 mini calzones):
- -1 tube of jumbo buttermilk biscuits (8 pack)
- -1 10oz pack of frozen spinach, thawed and drained
- -1 1/2 cups ricotta cheese
- -1 tsp salt
- -2 tsps garlic powder
- -2 tsps onion powder
1. First, thaw your spinach and drain it. Best way to drain it is to take bunches of spinach and squeeze the water out by hand.
2. Mix spinach with ricotta. Add the salt, garlic powder, and onion powder.
Yum, try not to eat all of it before you're done making the calzones.
3. Open a tube of biscuits. Savor the delightful "pop" of the tube opening. Then take out your 8 biscuits.
Now, cut each of them in half so that they're now half as tall.
4. Take one of the rounds of dough and press all around it with your hands until they're thinner and wider.
5. Fill half with a spoonful of the ricotta mix.
6. Close in half and pinch the ends shut. Tuck the edges underneath as you place them on a pan.
How cute are these??
7. Bake at 350F for 15-20 minutes or until golden brown.
How gorgeous are these! Aren't they beautiful?
And they taste fantastic! Little bites of cheese and spinach on the inside...delicious and crispy on the outside!
And you can just replace spinach with whatever you wanna put in them. You can serve these plain, or you can also serve with a marinara dip. The possibilities are endless!
Plus, kids will love making these and eating these!
