%20for%20the%20very%20first%20time%20and%20you%20should%20see%20how%20he%20looks%20around,%20curiosity%20filling%20in%20his%20eyes,%20at%20the%20trees,%20birds,%20squirrels%20and%20at%20other%20kids%20playing%20in%20the%20park.%20How%20I%20love%20that%20look!%20:-)%3C/p%3E%3Cp%3ENow%20to%20my%20recipe%20,%20Mini%20Bundt%20Apple%20Pies.%20I'm%20not%20sure%20if%20anyone%20else%20has%20ever%20heard%20of%20or%20made%20an%20Apple%20Pie%20in%20a%20Bundt%20pan!%20So%20do%20I%20get%20a%20patent%20for%20creating%20these%20cuties??!!%20:-D%3C/p%3E%3Cp%3EWell%20I%20made%20these%20a%20couple%20of%20weeks%20back%20when%20winter%20was%20still%20in%20the%20air%20and%20the%20thought%20of%20some%20nice%20and%20warm%20homemade%20pie%20just%20could%20not%20be%20neglected.%20And%20I%20had%20a%20whole%20bag%20of%20crispy%20n%20juicy%20Red%20Fuji%20apples!%3C/p%3E%3Cp%3EThis%20was%20my%20second%20try%20at%20baking%20pies.%20Well%20for%20an%20amateur%20at%20making%20pies%20from%20scratch,%20I%20never%20thought%20my%20crust%20would%20come%20out%20so%20good%20and%20I%20have%20to%20be%20honest%20that%20it%20took%20me%20sometime%20to%20get%20this%20done,%20as%20the%20pie%20dough%20kept%20breaking%20while%20rolling%20and%20the%20cookie%20cutter%20I%20used%20did%20not%20create%20a%20circle%20that%20was%20big%20enough%20to%20fill%20in%20the%20mini%20bundt%20pan....So%20lots%20of%20trials%20and%20errors%20later%20I%20was%20able%20to%20utilize%20the%20whole%20pie%20crust%20dough%20I%20made,%20to%20prepare%205%20mini%20bundt%20pies%20:-)%3C/p%3E%3Cp%3EI%20took%20the%20recipe%20for%20the%20Apple%20Pie%20filling%20from%20the%20blog%20Baking%20Bites%20,%20it%20was%20just%20a%20random%20search%20and%20I%20found%20the%20recipe%20easy%20and%20it%20turned%20out%20great!.%3C/p%3E%3Cp%3EThe%20recipe%20for%20the%20Pie%20crust%20is%20from%20my%20own%20recipe%20for%20the%20Lattice%20crust%20on%20my%20Cherry%20and%20Blueberry%20Pie.,%20but%20I%20added%20more%20butter%20and%20less%20sugar%20;-)%3C/p%3E%3Cp%3EMini%20Bundt%20Apple%20Pies%20Recipe%3C/p%3E%3Cp%3EYou'll%20need%3C/p%3E%3Cp%3EPie%20Crust%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EFor%20Pie%20Crust%3C/p%3E%3Cp%3E1.%20Knead%20together%20the%20all%20purpose%20flour,%20cold%20butter%20and%20sugar%20with%20ice%20cold%20water.%3C/p%3E%3Cp%3E2.%20Make%20a%20smooth%20pie%20dough%20,%20cover%20it%20with%20plastic%20wrap%20and%20place%20it%20in%20the%20fridge%20or%20freezer%20until%20chilled%20well.%20(about%2030%20minutes%20to%20an%20hour).%3C/p%3E%3Cp%3EFor%20Pie%20Filling%3C/p%3E%3Cp%3E1.%20In%20a%20large%20skillet%20over%20medium%20heat,%20melt%20the%20butter.%20Add%20in%20apples%20and%20sautee%20for%204-5%20minutes,%20until%20they%20just%20start%20to%20soften.%3C/p%3E%3Cp%3E2.%20In%20a%20medium%20bowl,%20whisk%20together%20cinnamon,%20nutmeg%20(optional),%20brown%20sugar,%20cornstarch%20and%20salt.%20Add%20to%20apples%20and%20stir%20to%20coat.%3C/p%3E%3Cp%3E3.%20Cook%20until%20sugar%20is%20bubbling,%20apples%20are%20very%20tender%20and%20the%20mixture%20starts%20to%20thicken,%205-8%20minutes.%3C/p%3E%3Cp%3E4.%20Remove%20from%20heat%20and%20stir%20in%20vanilla.%20Set%20aside%20to%20cool%20to%20room%20temperature.%3C/p%3E%3Cp%3ETo%20prepare%20Mini%20Bundt%20Apple%20Pies%3C/p%3E%3Cp%3E1.%20Preheat%20oven%20to%20400F.%3C/p%3E%3Cp%3E2.%20Cut%20the%20pie%20crust%20dough%20in%20half%20and%20roll%20out%20one%20half%20of%20the%20pie%20crust%20dough%20on%20a%20lightly%20floured%20surface%20until%20they%20are%20about%201/8-inch%20thick.%3C/p%3E%3Cp%3E3.%20Cut%20dough%20into%20rounds%20about%201-%201.5%20inches%20larger%20than%20the%20size%20of%20the%20mini%20bundt%20pan%20that%20you%20will%20be%20using%20(%20you%20can%20also%20use%20muffin%20tin%20or%20mini%20pie%20pan).%3C/p%3E%3Cp%3E4.%20Press%20dough%20into%20pan%20and%20up%20the%20sides.%20(I%20spread%20some%20melted%20butter%20around%20the%20side%20of%20each%20pan%20round)%3C/p%3E%3Cp%3E5.%20Roll%20out%20remaining%20half%20of%20the%20pie%20crust%20dough%20on%20a%20lightly%20floured%20surface.%20Cut%20smaller%20rounds%20into%20remaining%20dough%20to%20form%20the%20tops%20of%20the%20pies.%3C/p%3E%3Cp%3E6.%20Use%20a%20tablespoon%20to%20spoon%20out%20the%20cooled%20apple%20mixture%20into%20each%20prepared%20pie%20crust.%20(%20I%20used%20about%203%20tblsp%20in%20each%20)%20Some%20liquid%20will%20have%20been%20released%20from%20the%20apples,%20so%20evenly%20distribute%20this%20as%20well.%3C/p%3E%3Cp%3E7.%20Top%20pies%20with%20a%20second%20round%20of%20dough%20and%20press%20down%20the%20edges%20with%20a%20fork%20to%20seal.%20Also%20press%20the%20fork%20down%20the%20centre%20of%20the%20pies%20to%20release%20any%20steam%20which%20may%20come%20out.%3C/p%3E%3Cp%3E8.%20Bake%20for%2016-20%20minutes,%20until%20pastry%20is%20golden%20brown.%20Allow%20pies%20to%20cool%20in%20pan%20for%2010%20minutes,%20then%20gently%20loosen%20and%20transfer%20to%20a%20wire%20rack%20to%20cool%20before%20serving.%3C/p%3E%3Cp%3ESuggestions%20and%20Tips:%3C/p%3E%3Cp%3E1.%20Prepare%20the%20Pie%20dough%20first%20before%20preparing%20the%20filling,%20that'll%20give%20you%20enough%20time%20to%20help%20the%20dough%20to%20get%20chilled%20(I%20used%20the%20freezer%20to%20chill%20-%20around%2020-25%20mins)%3C/p%3E%3Cp%3E2.%20Make%20sure%20your%20first%20pie%20crust%20round%20(which%20will%20form%20the%20base%20for%20you%20filling%20is%20larger%20than%20the%20diameter%20of%20each%20individual%20rounds%20of%20%20your%20pie%20pan)%20.%20This%20is%20very%20IMPORTANT!!!%20%20(Mine%20wasn't%20upto%20the%20mark,%20so%20a%20bit%20of%20my%20pie%20filling%20poured%20out%20while%20baking)%3C/p%3E%3Cp%3E3.%20You%20can%20use%20any%20fruit%20filling.%3C/p%3E%3Cp%3EThe%20actual%20recipe%20was%20for%20preparing%206%20mini%20pies,%20so%20I%20had%20some%20leftover%20apple%20pie%20filling...which%20we%20both%20gladly%20licked%20up%20to%20the%20last%20drop!%20:-)%20The%20pie%20crust%20was%20so%20buttery%20and%20soft%20yet%20crispy%20,%20almost%20the%20texture%20of%20sugar%20cookies%20and%20the%20pis%20pie%20filling%20was%20exceptional.%3C/p%3E%3Cp%3EYou%20could%20add%20some%20whipped%20cream%20into%20the%20bundt%20holes%20or%20any%20left%20over%20pie%20filling%20and%20enjoy%20this%20really%20cute%20dessert!%20We%20really%20enjoyed%20these%20and%20I'm%20sure%20you%20will%20too.%3C/p%3E%3Cp%3E-Manju%3C/p%3E){kind=link}
