- Soften gelatin in cool water; stir over low heat till gelatin is dissolved. Remove from heat, and stir in rum and mincemeat. Chill, stirring occasionally, till mix mounds when dropped from a spoon.
- Beat egg whites till stiff but not dry. Add in salt and sugar, and beat well. Fold gelatin mix into egg whites; mix in whipped cream. Spoon into pastry shell. Garnish as desired with cherries. Refrigeratetill hard. Yield: 1 (9 inch) pie.
