:%20mustard%20greens,%20lacinato%20kale%20(it's%20no%20curly%20kale,%20but%20it'll%20do),%20apples,%20zucchini,%20cucumbers,%20sweet%20potatoes,%20eggplants,%20bell%20peppers,%20okra,%20mizuna/arugula%20mix,%20yellow%20squash,%20and%20brown%20rice.%3C/p%3E%3Cp%3EWe%20had%20a%20friend%20over%20the%20other%20evening%20and%20I%20made%20some%20millet%20with%20a%20roasted%20vegetable%20sauce.%20Originally,%20I%20was%20just%20going%20to%20top%20the%20millet%20with%20roasted%20vegetables,%20but%20then%20I%20decided%20to%20put%20it%20in%20a%20pan%20after%20roasting%20and%20after%20I%20added%20things...it%20turned%20into%20a%20sauce!%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400%20degrees.%20Put%20all%20the%20cut%20vegetables%20in%20a%20bowl%20and%20add%20Creole%20Seasoning.%20Mix%20well%20to%20coat.%20(watch%20the%20salt...this%20stuff%20can%20be%20really%20salty).%20Put%20the%20vegetables%20on%20a%20baking%20sheet%20sprayed%20with%20oil.%20When%20the%20oven%20is%20ready,%20put%20the%20veggies%20in.%20Set%20timer%20for%2025%20minutes.%3C/p%3E%3Cp%3EMake%20the%20millet:%20Put%20the%20millet%20in%20a%20pan%20and%20put%20it%20on%20medium-high%20heat.%20Shake%20the%20pan%20every%20once%20in%20a%20while.%20When%20it%20starts%20to%20smell%20nutty%20(don't%20let%20it%20burn!),%20add%20the%20water%20and%20bring%20to%20a%20boil.%20Simmer,%20covered,%20for%20about%2015%20minutes%20until%20the%20water%20is%20absorbed.%3C/p%3E%3Cp%3EAfter%2025%20minutes,%20stir%20the%20vegetables%20in%20the%20pan%20and%20put%20back%20in%20oven%20for%2010%20more%20minutes.%20When%20done,%20add%20them%20to%20a%20large%20saute%20pan%20on%20the%20stove%20with%20the%201/2%20cup%20water.%20%20Cook%20on%20medium%20heat.%20%20Add%20the%20non-dairy%20milk,%20spices,%20and%20tomato%20paste.%20Stir%20well.%20%20If%20it's%20too%20thick%20for%20you,%20add%20a%20little%20water.%20If%20it's%20too%20thin,%20add%20a%20little%20more%20%22milk%22.%20Salt%20as%20needed.%20Serve%20over%20the%20millet.%3C/p%3E%3Cp%3ENow%20onto%20the%20newest%20smoothie%20in%20my%20collection!%3C/p%3E%3Cp%3ESour%20Cranberry%20Smoothie:%3C/p%3E%3Cp%3E1/2%20cup%20100%25%20cranberry%20juice%20(no%20sweetener%20added)%3C/p%3E%3Cp%3E1/2%20cup%20frozen%20raspberries%3C/p%3E%3Cp%3E1/2%20cup%20frozen%20peaches%3C/p%3E%3Cp%3E1/2%20cup%20water%3C/p%3E%3Cp%3E(sweetener-optional)%3C/p%3E%3Cp%3EBlend!%20It's%20pretty%20darn%20sour,%20but%20I%20love%20it!%20Feel%20free%20to%20add%20a%20little%20sweetener%20if%20you%20need%20it...or%20use%20sweetened%20cranberry%20juice.%20But%20I'm%20telling%20ya.....you%20should%20try%20it%20the%20sour%20way%20first!%3C/p%3E%3Cp%3EIt's%20gotten%20so%20cool%20here.%20%20It's%20been%20in%20the%20low%2060's%20in%20the%20morning!%20What?%20Yup.....brrrrrr.%20I've%20had%20to%20actually%20put%20long%20pants%20on%20and%20a%20real%20shirt%20for%20walking%20in%20the%20mornings.%20It's%20only%20in%20the%20mid-70's%20in%20the%20afternoons.%20I%20think%20Fall%20has%20finally%20arrived.%20Yay!%20%20I%20will%20definitely%20be%20doing%20a%20Fall%20beer%20tasting%20in%20the%20next%20few%20weeks,%20so%20stay%20tuned%20for%20that.%20Next%20post%20will%20be%20my%20Atlanta%20trip%20post.%3C/p%3E%3Cp%3EEat%20smart,%3C/p%3E%3Cp%3ET.%3C/p%3E){kind=link}
