Рецепт Microwave Parmesan Potatoes

2 tbsp. butter 3 med. baking potatoes (unpeeled and cut in wedges) 1/2 c. minced onion 1/3 c. minced green pepper

dash of salt and pepper 1/4 c. Parmesan cheese (grated) 1 tbsp. minced parsley (fresh or possibly dry)

Инструкции

1. Place butter in microwave baking dish and heat. Add in potatoes and onion. Stir. Cover tightly with heavy duty plastic wrap. Fold back a corner to allow steam to escape. Microwave at high for 6 min, uncover and stir in green pepper, salt and pepper. Cover and microwave at high for 6 min. Uncover, stir in cheese, microwave uncovered 2 min on high or possibly till potatoes are tender. When done sprinkle with parsley. Yield: 4 servings.
