Are you ready for game day? I certainly am and I’ve been dreaming up all kinds of delicious cheesy snacks for the big day. Thanks to Cabot Creamery; a farmer owned cooperative of more than 1200 farmers located throughout New England and New York, I have plenty of samples to start snacking!
Did you know that Cabbot’s cheddar cheeses are a protein rich snack that are naturally lactose free? That’s a good thing, especially for those that have lactose intolerance.
My first appetizer for game day is a Mexican Pizza, because you have to have a taste of Mexican for the superbowl, right?
Mexican Pizza
INGREDIENTS
- 1 tablespoon Avocado or Olive Oil
- 3 cloves of garlic, minced
- 1 cup chopped onion
- ½ teaspoon dried oregano
- 1 teaspoon ground cumin
- ½ teaspoon ground corriander
- 1 tablespoon ancho chili powder
- 1 ½ tablespoons chopped chipotle chiles in adobo sauce
- ½ to 1 jalapeno pepper minced
- 1 chopped tomato or 1 cup diced tomatoes
- 1 16 ounce package of extra firm organic tofu drained, dried and broken into crumbles (3/4 pound of diced cooked chicken breast)
- ½ cup black beans
- ½ cup beer or vegetable broth
- juice of ½ lime
- 2 burrito sized whole wheat tortillas
- ½ cup of grated Cabot Pepper Jack Cheese
- ½ cup of grated Cabot Vermont Sharp Cheese
- Suggested Toppings:
- sliced avocado
- shredded Lettuce
- diced tomatoes
- dced red Onions
- Geek Yogurt
- guacamole
- Salsa
INSTRUCTIONS
Heat a skillet over medium heat and heat the oil
Combine the pepper jack and cheddar cheeses in a bowl and set aside
Saute the onions and garlic until softened; about 5 minutes.
Add the oregano, cumin, coriander and chili powder; mix well
Stir in the Chipolte chiles in adobo and the jalapenos - mix well
Add the tomatoes and cook for one to two minutes more and stir in the crumbled tofu along with the beer or broth, cook on low until liquid reduces approximately 10 minutes
Add the beans and cook until heated through, about 5 more minutes
Sprinkle with lime juice and set aside
Place one tortilla in a lightly oiled 9 inch pie plate
Top the tortilla with half of the tofu and bean mixture,top with half of the cheese
Place the second tortilla on top and spread the remaining of the tofu and bean mixture over the tortilla
Top with remaining cheese and bake in 350 oven for 20 minute
Remove from oven, top with your favorite toppings
