,%20Burgers...%20and%20of%20course%20one%20of%20my%20favorites%20Mexican!!%20When%20you%20think%20of%20a%20Mexican%20meal%20you%20don't%20generally%20think%20of%20it%20as%20a%20light%20meal,%20but%20I%20lightened%20up%20taco%20night!%3C/p%3E%3Cp%3EInstead%20of%20ground%20beef%20I%20used%20lean%20ground%20turkey,%20instead%20of%20flour%20tortillas%20I%20used%20iceberg%20lettuce%20leaves.%20The%20hubs%20admitted%20afterwards%20that%20he%20was%20a%20little%20nervous%20when%20he%20didn't%20see%20the%20tortillas%20but%20he%20liked%20it%20with%20the%20lettuce.%20The%20lettuce%20adds%20great%20crunch%20and%20a%20whole%20lot%20less%20calories!%20I%20set%20up%20toppings%20like%20olives,%20salsa,%20shredded%20cheddar%20and%20diced%20avocado%20in%20little%20bowls%20so%20everyone%20could%20make%20their%20own%20Mexican%20lettuce%20wrap.%3C/p%3E%3Cp%3EI%20made%20a%20Spanish%20style%20rice%20using%20brown%20rice.%20The%20rice%20is%20flavored%20with%20tomato%20paste,%20peas,%20carrots%20and%20manzanilla%20olives%20(the%20green%20ones%20with%20the%20pimento%20inside).%20This%20is%20really%20easy%20to%20make%20and%20a%20great%20side%20dish%20our%20Mexican%20Lettuce%20Wraps!%20The%20rice%20takes%20longer%20to%20make%20so%20start%20with%20that.%20As%20the%20rice%20is%20cooking%20%20and%20the%20%22sauce%22%20for%20it%20is%20started,%20you%20can%20then%20go%20ahead%20and%20get%20the%20turkey%20going.%3C/p%3E%3Cp%3EBoil%20the%20the%20rice%20until%20cooked%20through.%20Drain%20and%20return%20to%20the%20pot.%3C/p%3E%3Cp%3EIn%20a%20large%20pan,%20over%20medium%20heat,%20add%20the%20water,%20tomato%20paste%20and%20a%20bit%20of%20pepper%20(i%20don't%20season%20with%20salt%20because%20in%20my%20opinion%20the%20olives%20add%20enough%20but%20you%20can%20certainly%20taste%20test%20at%20the%20end).%20Stir%20until%20the%20tomato%20paste%20has%20blended%20completely.%3C/p%3E%3Cp%3EStir%20in%20the%20peas%20&%20carrots,%20olives%20and%20oregano.%20%20Simmer%20on%20low%20for%205-6%20minutes.%3C/p%3E%3Cp%3EStir%20the%20rice%20into%20the%20pan%20and%20toss%20to%20coat%20the%20rice%20well.%20Season%20with%20salt%20and%20pepper%20to%20your%20liking.%3C/p%3E%3Cp%3EHAPPY%20EATS!!!%3C/p%3E%3Cp%3E*this%20is%20my%20original%20recipe*%3C/p%3E){kind=link}
