Mexican Green Rice
I am sure I have all of you covered for a variety of healthier Mexican dishes so you can host an incredible Mexican Fiesta. On my list for future posts include:

To make this incredible Mexican Green Rice aka: Mexicana Arroz Verde; I used my Homemade Salsa Verde . I am going to beg you not to buy the green stuff in a bottle anymore. I was not fond of salsa verde, especially the one in the bottle, until I made my own.
Mexican Green Rice

Serves: 4
Ingredients
- 2 cloves garlic, minced
- ½ teaspoon coarse sea salt
- 1 cup low sodium chicken or vegetable broth
- ¾ cup salsa verde
- ⅛ cup chopped fresh cilantro
- 1 cup long grain rice
Directions
Spray a medium sauce pan with non stick spray and add the garlic.
cook for about 2 minutes.
Stir in the broth and the salsa verde add the sea salt and bring to a boil.
stir in the uncooked rice; reduce heat to low.
Simmer, covered for 20 to 25 minutes.
Remove pan from heat.
Remove the lid. Cover the pan with a clean kitchen towel. Replace the lid and let stand for 5 minutes.
remove the lid and the towel.
Add the cilantro, fluff the rice with a fork and serve.

I loved the change from traditional Spanish rice, which uses a tomato base.
