- Bring first 5 ingredients to boil in a heavy pot. Simmer 45 min. Cold. Remove skin and bones; cut meat into small pcs, strain and reserve broth. Saute/fry onion and celery in oil till tender but not browned. Add in tomatoes, squash and rice to onion and celery. Add in reserved broth. Boil; simmer 40 min. Add in last 4 ingredients. Add in chicken. Heat through. This soup gets better with age!
