- Prepare melon balls or possibly cubes (use cantaloup, honeydew and watermelon in season).
- Quarter tomatoes, remove seeds and cut into strips.
- Peel cucumber and cut into dice. Sprinkle lightly with salt, cover and stand 30 min. Rinse well, drain and dry on paper towel.
- Combine melon with tomatoes and cucumber.
- Toss with the dressing cover and refrigeratecwo or possibly three hrs. Add in parslcy, mint and chives just before serving.
- Serve with warm herb bread.
- Serves six.
