Who says that sandwiches have to be filled with meat to be satisfying anyway? This Mediterranean Veggie Sandwich is full of vegetables, lots of flavor, and it’s filling! It’s far from a wimpy sandwich and will stand up to a meat filled sandwich any day.
This week #SundaySupper is celebrating National Sandwich Month. I think sandwiches deserve to be celebrated, they are such an easy and fun way to eat food, aren’t they? You can put just about anything you want in between two slices of bread, and they are portable! Fun Fact: Did you know that the sandwich was invented by John Montagu, the fourth Earl of Sandwich way back in the 1700s? According to foodtimeline.org, he was a gambler who did not want to leave his gaming table for supper, so he ate it between bread!
Since it’s the middle of summer, and the veggies are overflowing, I had to share one of my favorite sandwiches that’s filled with fresh vegetables on whole grain sourdough bread with a crispy crust. This Mediterranean Veggie Sandwich really doesn’t need a recipe, just spread some hummus on the bottom slice and layer your favorite veggies as high as you want, then top with feta or goat cheese and some chopped kalamata olives. Mediterranean Veggie Sandwich Save Print Prep time Total time Filled with vegetables this sandwich is a very healthy and satisfying sandwich that's perfect for lunch or a light dinner Author: Anne Serves: 1 Ingredients 1 tablespoon plain or garlic hummus ½ small to medium zucchini sliced thin lengthwise 1 small cucumber sliced thin lengthwise 2 to 3 thin slices of red onion a handful of baby spinach 1 small to medium tomato sliced thin 1½ teaspoons feta or goat cheese crumbles 4 to 5 chopped kalamata olives or olive tapenade 2 slices of whole grain sourdough bread or your favorite crusty bread Instructions spread the hummus onto one slice of bread layer the vegetables on top using the tomato last top with cheese crumbles and olives and the remaining slice of bread Nutrition Information Calories: 273 Fat: 6.8g Saturated fat: 1.8g Unsaturated fat: 3.9g Carbohydrates: 45.6g Sugar: 11.5g Sodium: 506 Fiber: 6.9g Protein: 12g Wordpress Recipe Plugin by EasyRecipe 3.5.3226
