Wonderful weekend supper or when company comes to visit. The oven does all the work! Lovely presentation with great flavors.

- Slice the tops from each pepper (reserve), clean out seeds and membranes from each pepper, rinse well, dry
- In a large mixing bowl add cooked rice, chicken cubes, lemon zest and juice, stir as you add each ingredient, add minced garlic, oregano, dill, stir gently, add diced finely shallots, diced tomato, mint,
- Once all seasonings/rice/chicken are incorporated fill each pepper cavity full, add feta cheese crumbles to the top of each, add top of the pepper, and place in a non stick baking dish, add vegetable or chicken stock, tomato paste, drizzle with olive oil and whisk together.
- Lightly cover with a tent foil and place in a 375 F oven and bake 25 minutes.
- Serve and enjoy the flavors!
