Vegetarians often have a hard time getting enough protein into their diet.
Quinoa is a complete protein containing all 8 essential amino acids.
How to Cook:
1 part Quinoa to 2 parts liquid, bring to a boil, reduce heat & simmer for 15 minutes.
How to Store
In a glass jar in the refrigerator, I like to use a Mason Jar.

Mediterranean Quinoa Salad
Ingredients
- Quinoa, 4 cups, cooked
- Lemon x1, zested
- Sun-dried tomatoes (packed in oil), 4 tablespoons, chopped
- Kalamata Olives, 4 tablespoons, chopped
- Capers (rinsed and drained), 4 tablespoons
- Parsley, 2 tablespoons, minced
- Feta Cheese, 4 oz, crumbled
Putting it all together
Combine the lemon zest, Kalamata olives, Sun-dried tomatoes, Capers, Parsley and Feta Cheese in a bowl, stir to combine.
Add the cooked Quinoa once it is room temperature or has been chilled in the refrigerator, stir to combine. I don't find that this recipe needs salt & pepper, the capers make it salty.
Optional
Add a squeeze of lemon and a drizzle of oil from the sun-dried tomatoes, you can also use extra-virgin olive oil.
