%20and%20my%20thoughts%20on%20meat%20(try%20to%20make%20good%20decisions%20about%20where%20it%20comes%20from,%20etc.%20I%20don%E2%80%99t%20have%20guilt%20about%20eating%20something%20that%20had%20a%20good%20life)%20but%20there%20is%20this%20thing%20that%20happens%20in%20the%20food%20blogging%20world%20called%20Meatless%20Monday,%20and%20today,%20I%20am%20contributing.%3C/p%3E%3Cp%3EI%20am%20not%20sure%20how%20Meatless%20Monday%20came%20about,%20but%20I%20think%20the%20theory%20behind%20it%20is%20to%20go%20a%20day%20without%20meat%20because%20it%20is%20good%20for%20our%20human%20selves%20and%20the%20earth.%20I%20can%20get%20behind%20that.%20The%20funny%20thing%20is%20I%20actually%20eat%20vegetarian%20plenty%20of%20the%20time.%20I%20probably%20only%20eat%20red%20meat%20a%20couple%20of%20times%20a%20month,%20maybe%20once%20a%20week,%20if%20you%20count%20cured%20meats%20and%20the%20like.%20I%20eat%20a%20lot%20of%20chicken%20for%20sure.%20But%20I%20eat%20meat%20free%20meals%20fairly%20regularly,%20especially%20if%20I%20am%20allowed%20to%20count%20eggs%20as%20meat%20free.%20My%20pasta%20is%20almost%20always%20meat%20free%20and%20I%20eat%20that%20all%20the%20time.%20I%20just%20rarely%20make%20the%20connection%20that%20what%20I%20am%20eating%20is%20vegetarian.%20I%20like%20the%20idea%20of%20Meatless%20Monday%20as%20a%20broad%20idea%20for%20the%20betterment%20of%20humanity.%20My%20only%20issue%20with%20it%20is%20maybe%20the%20Monday%20part.%20As%20my%20good%20friend%20M%20said%20%E2%80%9Cumm,%20Meatless%20Monday%20drives%20me%20crazy%20because%20Monday%20is%20the%20day%20after%20I%20grocery%20shop%20and%20when%20I%20am%20most%20likely%20to%20have%20meat.%E2%80%9D%20Touch%C3%A9%20M.%3C/p%3E%3Cp%3EThis%20is%20a%20long%20way%20of%20saying%20that%20this%20recipe%20would%20be%20an%20excellent%20addition%20to%20a%20Meatless%20Monday%20repertoire,%20even%20if%20you%20choose%20to%20make%20it%20a%20Meatless%20Thursday%20instead.%3C/p%3E%3Cp%3Echickpea%20and%20spinach%20stew%3C/p%3E%3Cp%3EI%20discovered%20I%20like%20chickpeas%20fairly%20recently%20(I%20think%20I%20have%20mentioned%20the%20deep%20dark%20secret%20I%20carried%20around%20with%20me%20for%20the%20entirety%20of%20my%20youth%20and%20into%20my%20adult%20years%20as%20a%20cooking%20and%20food%20obsessed%20human%20%E2%80%93%20there%20are%20plenty%20of%20things%20I%20did%20not%20like%20at%20all,%20but%20I%20just%20never%20really%20discussed%20it,%20so%20I%20don%E2%80%99t%20think%20anyone%20knew%E2%80%A6curries,%20and%20%E2%80%9CIndian%20Food%E2%80%9D%20more%20broadly,%20chickpeas,%20sauces%20with%20yogurt%20in%20them,%20feta%20cheese%20(still%20HATE%20this%20one)%20game%20meats,%20sun-dried%20tomatoes%20(still%20not%20sold)%20roe%20of%20various%20things,%20roasted%20red%20peppers,%20smoked%20salmon%20(STILL,%20blech)%20avocados(?!?!?))%20but%20I%20am%20coming%20around.%20My%20palate%20is%20expanding.%20I%20think%20my%20distaste%20for%20chickpeas%20comes%20from%20their%20customary%20spot%20in%20a%20salad%20bar.%20When%20chickpeas%20are%20on%20a%20salad%20bar%20they%20look%20rubbery%20and%20shiny%20and%20weird%20and%20generally%20unappetizing,%20so%20I%20assumed%20I%20did%20not%20like%20them.%20I%20still%20do%20not%20like%20chickpeas%20from%20a%20salad%20bar,%20but%20chickpeas%20in%20food%20are%20something%20I%20can%20get%20behind.%20I%20started%20with%20Chana%20Masala,%20and%20fried%20chickpeas,%20and%20one%20of%20my%20regular%20%E2%80%9CI%20just%20got%20home%20and%20I%20am%20already%20so%20hungry%20I%20could%20eat%20my%20hand%E2%80%9D%20thrown%20together%20dinners%20is%20chickpeas%20fried%20for%20a%20moment,%20spiced%20with%20ras%20el-hanout%20or%20curry%20powder,%20with%20red%20onions%20thrown%20in%20the%20pan%20to%20wilt,%20and%20then%20tossed%20with%20olive%20oil,%20lemon%20juice%20and%20shaved%20parmesan%20cheese%20%E2%80%93%20so%20random%20and%20really%20quite%20good.%20So%20when%20I%20saw,%20in%20my%20meander%20through%20old%20Food%20&%20Wine%20mags,%20a%20recipe%20for%20Spanish%20tapas%20inspired%20chickpea%20stew%20I%20decided%20to%20give%20it%20a%20go.%20I%20am%20quite%20pleased%20that%20I%20did.%20I%20have%20already%20made%20it%20a%20couple%20of%20times,%20it%20reheats%20really%20well%20for%20lunches,%20and%20it%20is%20very%20comforting%20while%20still%20feeling%20healthy.%20And%20it%E2%80%99s%20quick!%3C/p%3E%3Cp%3EAnd%20now,%20I%20bid%20you%20adieu.%20Many%20apologies%20if%20this%20sounds%20like%20it%20was%20written%20by%20a%20crazy%20person,%20I%20worked%2013%20hours%20today%20and%20I%20am%20a%20little%20punchy%E2%80%A6%3C/p%3E%3Cp%3EBefore%20we%20get%20to%20the%20actual%20recipe%E2%80%A6so%20many%20things!%3C/p%3E%3Cp%3EDownton%20Downton%20Downton%20Downton.%20Oh%20Downton%20Abbey%20how%20I%20love%20thee%E2%80%A6%3C/p%3E%3Cp%3EYo%20soy%20fiesta.%3C/p%3E%3Cp%3EOne%20month%20til%20Denver%20to%20visit%20the%20littlest%E2%80%A6I%20can%E2%80%99t%20wait.%3C/p%3E%3Cp%3EPortlandia?%20Supposed%20to%20be%20the%20funniest%20thing%20ever?%20Am%20I%20doing%20it%20wrong?%3C/p%3E%3Cp%3EI%20hope%20you%20are%20reading%20the%20City%20Kitchen%20columns%20by%20David%20Tanis%20in%20the%20New%20York%20Times.%20I%20want%20to%20make%20everything%20immediately.%3C/p%3E%3Cp%3ERemember%20the%20ginger%20chicken%20soup%20I%20had%20on%20the%20stove?%20Umm,%20I%20think%20it%20might%20cure%20colds.%20I%20have%20a%20sample%20of%20one%20so%20far,%20but%20it%20definitely%20worked.%20If%20I%20get%20another%20cold%20I%20will%20try%20it%20again%20and%20let%20you%20know.%3C/p%3E%3Cp%3EUse%20the%20flat%20side%20of%20a%20large%20knife%20and%20mash%20the%20garlic%20to%20a%20paste%20with%201/2%20teaspoon%20of%20salt%20and%20the%20saffron.%20Transfer%20the%20garlic%20paste%20to%20a%20small%20bowl.%20Add%20the%20paprika,%20cumin,%20cloves%20and%20black%20pepper%20and%20mash%20until%20combined.%20Stir%20in%201/4%20cup%20of%20the%20chickpea%20liquid.%3C/p%3E%3Cp%3EWipe%20out%20the%20skillet.%20Add%202%20tablespoons%20of%20the%20olive%20oil%20to%20the%20skillet%20and%20heat%20until%20shimmering.%20Add%20the%20onion%20and%20tomato%20and%20cook%20over%20moderately%20high%20heat,%20stirring%20occasionally,%20until%20they%20are%20softened,%20about%203%20minutes.%20Add%20the%20spiced%20garlic%20sauce%20to%20the%20onion%20and%20tomato%20in%20the%20skillet%20and%20cook%20for%201%20minute.%3C/p%3E%3Cp%3EAdd%20the%20chickpeas%20and%20the%20remaining%20liquid%20to%20the%20skillet.%20Add%20the%20raisins%20and%20bring%20to%20a%20boil%20over%20moderately%20high%20heat.%20Add%20the%20spinach,%20reduce%20the%20heat%20to%20moderate,%20and%20simmer%20for%2015%20minutes.%20Transfer%20the%20chickpea%20stew%20to%204%20deep%20bowls,%20drizzle%20the%20remaining%202%20tablespoons%20of%20olive%20oil%20on%20top,%20and%20serve.%3C/p%3E){kind=link}
