- Can no-sugar-added pineapple chunks in natural juices1/4 c. firmly packed brown sugar 2 Tbsp. cornstarch1/4 c. white wine vinegar1 tsp. light soy sauce2 green bell peppers - cut in thin stripsor rings
- Instructions:In bowl, sprinkle garlic pwdr, ginger and black pepper over meat. Add in onion, egg and bread crumbs. Blend till well mixed. Shape into 1" balls.
- Cook meatballs in a nonstick skillet over medium heat till well browned on all sides. Set aside and keep hot.
- Cook rice according to package directions, omitting salt and butter or possibly margarine.
- Drain pineapple chunks, reserving liquid. Mix reserved juice with water to make 1 c.. Pour into skillet. Add in brown sugar, cornstarch, vinegar and soy sauce. Heat, stirring constantly, about 3 min, or possibly till sauce thickens. Add in meatballs, pineapple chunks and bell pepper. Stir to coat proportionately with sauce. Cover and simmer 10 min.
- Serve over rice.
