To kick off the Football Season, I'm making Meatball Sandwiches!
Perfect for the first Packer Game of the 2014 Regular Football Season!!

For the Meatballs:
- 16 oz lean ground beef
- 8 oz bulk Italian sausage
- 1/3 cup dry Italian bread crumbs
- 2 T ketchup
- 1/4 t garlic powder
- 1/8 t each salt and pepper
- 1/4 cup minced onion
- 1/4 finely chopped green pepper
- 2 cloves garlic, minced
- 1 egg
- 2 T oil
- For the Sauce:
- 1 small onion, chopped
- 1/3 cup chopped sweet green pepper
- 2 cans (8 oz each) tomato sauce
- 1 can (14 1/2 oz) stewed tomatoes (Italian style)
- 1 cup of your favorite spaghetti sauce
- 1 t dried basil leaves
- 1 t dried oregano
- 1 t dried Italian seasoning
- salt and pepper to taste
- 4-6 Italian rolls, each 7 inches long
- 1 cup shredded part-skim mozzarella cheese
- Parmesan cheese
To prepare the meatballs:
In a large bowl, mix the ground beef, Italian sausage, bread crumb, ketchup, garlic powder, salt, pepper, onion, green pepper, garlic, and egg.
Mix together and form into 16-20 meatballs.
Heat 2 T oil in a large skillet over moderate heat. Add the meatballs and cook for 10-15 minutes or until browned, turning occasionally.
Remove the meatballs.
Set aside.
Drain off fat.
To prepare sauce:
In the same skillet, combine the onion and green pepper.
Cook over moderately high heat until vegetables are tender.
Stir in the tomato sauce, tomatoes, spaghetti sauce, basil, oregano, Italian seasoning, salt and pepper.
Return the meatballs to skillet. Bring to a boil. Lower heat and simmer, covered, for 10 minutes more or until the meatballs are no longer pink on the inside and the sauce mixture is thickened.
Preheat the broiler.
With a serrated knife, cut a thin slice from the top of each roll and discard.
Hollow out the rolls.
Spoon the meatballs and the sauce into the rolls.
Sprinkle with the shredded mozzarella cheese and Parmesan cheese.
Broil the sandwiches 4 inches from the heat for 1 minute or until the cheese melts.
Makes 4-6 servings.
