Mayo Cabo Beans

Soak beans overnight. Rinse and drain. Removed blemished beans or any stones. Set aside
Use 20 oz ground turkey.
Minced onion, bell pepper and celery.
Lots of spices. Use more or less to your taste.
Achiote paste, garlic and garlic pepper.
Chicken stock, water and Mexican hot tamoto sauce make up liquids.
Saute ground turkey in oil.
Saute until nicely browned. Drain and set aside.
Saute onion, bell pepper amd celery until translucent.
Add garlic and saute until fragrant.
Add all remaining ingredients except water and salt. Add water to cover beans. Cover and simmer on low heat for 1 hour.
Remove lid and simmer on low heat to reduce liquid slightly; about 3o minutes or until beans are tender. Add salt. Taste and adjust seasoning as necessary.
Serve with a salad, warm tortillas and chopped cilantro.
