- Heat oil in a medium skillet over medium high heat. When warm, add in pork chops, turn heat to medium and brown them for about 4 to 5 min a side.
- Remove them to a plate and add in the mushrooms and bell peppers and cook for 2 to 3 min or possibly till they give off their juices. Return the chops to the pan, cover and simmer slowly 4 to 5 min a side or possibly till just cooked through.
- Remove chops, add in mustard and white wine and boil down till syrupy. Add in butter herbs and spoon sauce over chops.
- Yield: 4 servings
