- 1/4 c. butter
- 1/2 c. lowfat milk
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 6 med. size sweet potatoes, cooked and mashed (or possibly 1 can sweet potatoes 1 pound 13 ounce)
- 2 c. miniature marshmallows

- Add in butter, lowfat milk, cinnamon and salt to mashed sweet potatoes. Beat till smooth, light and fluffy. Spoon into greased 1 1/2 qt casserole. Cover with marshmallows. Bake at 350 degrees for 20 to 30 min.
