- Mix raisins with water and heat slowly, covered for 5 minutes. Blend together sugar, flour, egg yolks, and salt. Add in lowfat milk and vanilla.
- Cook in double boiler till thick and creamy. Add in raisin mix.
- Cold 3 min. Add in extract and pour into cold shell.
- Cover with meringue made by beating together 3 egg whiltes, 1/4 teaspoon cream of tartar, 6 Tb. sugar and 1/2 ts. vanilla.
- Bake at 400F for 10 min, or possibly till meringue browns.
