- 3 scallions, including most of the green, thinly sliced
- 3 T chopped fresh mint leaves

- 2 jalapeño chiles, seeded and finely diced
- 3 T extra-virgin olive oil
- 1 T fresh lemon juice
- 2 t lemon zest, finely grated
- salt and pepper, to taste

%20also%20known%20as%20Verdolaga,%20Pigweed,%20Little%20Hogweed%20or%20(my%20favorite)%20Pusley,%20is%20a%20succulent%20plant%20that%20is%20found%20most%20commonly%20in%20Mexican,%20Greek,%20and%20Middle%20Eastern%20cooking.%20It%20grows%20rampantly%20in%20our%20Mediterranean%20climate%20and%20it%20is%20readily%20available%20at%20the%20Hollywood%20Farmers%20Market.%20It%20gets%20very%20little%20attention%20as%20far%20as%20I%20have%20noticed.%20In%20fact%20I%20have%20walked%20past%20bunches%20of%20it%20every%20Sunday%20for%20years%20without%20looking%20twice.%3C/p%3E%3Cp%3EBut%20all%20that%20changed%20today%20because%20of%20a%20very%20knowledeable%20young%20woman%20named%20Andrea.%20You%20see,%20I%20was%20reading%20Fork%20Fingers%20Chopsticks%20recently%20and%20Andrea%20did%20a%20purslane%20salad%20that%20convinced%20me%20it%20was%20time%20to%20try%20this%20weed%20myself.%20I%20am%20very%20impressionable%20you%20know,%20so%20don't%20jump%20off%20a%20cliff%20I%20just%20might%20follow%20you...%3C/p%3E%3Cp%3EOf%20course%20my%20personality%20disorders%20probably%20don't%20interest%20you.%20You%20are%20here%20to%20learn%20about%20this%20weed%20I%20have%20been%20whacking%20on%20about...%20Well,%20it%20is%20a%20low-growing,%20creeping%20plant%20with%20small%20paddle-shaped%20green%20leaves%20and%20a%20thick%20reddish%20stem.%20Elizabeth%20Schneider%20describes%20it%20quite%20well%20in%20her%20book%20Vegetables%20from%20Amaranth%20to%20Zucchini:%3C/p%3E%3Cp%3EPerky%20purslane%20has%20oval,%20juicy-slippery,%20medium%20green%20or%20yellow-green%20leaves%20(more%20like%20pads)%20and%20a%20mild,%20fresh%20flavor%20brightened%20by%20a%20tart%20finish.%20Wild%20purslane%20(it%20grows%20naturally%20in%20most%20organic%20gardens,%20so%20%E2%80%9Cwild%E2%80%9D%20seems%20an%20exaggeration)%20and%20cultivated%20purslane%20can%20be%20quite%20different%E2%80%A6%20At%20its%20best%20(usually%20wild),%20purslane%20has%20a%20sorrel%20tang%20and%20a%20hint%20of%20tomato;%20mediocre%20purslane%20(usually%20cultivated),%20can%20be%20bland%20and%20slimy%20but%20still%20looks%20cute.%3C/p%3E%3Cp%3EWell%20I%20am%20going%20to%20give%20the%20credit%20to%20Andrea%20at%20FFC%20for%20getting%20me%20to%20stop%20and%20notice%20the%20purslane%20at%20the%20Hollywood%20Farmers%20Market%20today.%20But%20the%20inspiration%20for%20this%20salad%20came%20from%20an%20entire%20country.%20The%20country%20of%20Turkey.%20I%20have%20been%20quite%20interested%20in%20Turkish%20food%20lately%20and%20have%20been%20experimenting%20with%20these%20flavors%20quite%20a%20bit.%20But%20I%20am%20not%20going%20to%20give%20the%20Turks%20all%20the%20credit%20for%20today's%20recipe.%20Because%20in%20some%20ways%20it's%20original%20to%20me.%20Or%20at%20least%20I,%20to%20suit%20the%20meal%20I%20am%20planning%20tonight,%20have%20reinterpreted%20it.%3C/p%3E%3Cp%3EI%20am%20serving%20a%20tasty%20mixture%20of%20purslane,%20cucumber,%20tomato%20and%20jalape%C3%B1o%20as%20a%20salad.%20The%20type%20you%20would%20eat%20with%20a%20fork.%20Or%20at%20least%20I%20would%20eat%20it%20with%20a%20fork.%20But%20my%20salad%20is%20actually%20based%20on%20a%20relish%20you%20might%20find%20in%20most%20any%20tavern%20or%20restaurant%20in%20Istanbul.%20It%20often%20accompanies%20grilled%20meat%E2%80%93%20especially%20kebabs.%20The%20Turkish%20version%20is%20finely%20chopped%20and%20most%20typically%20eaten%20with%20a%20spoon,%20as%20are%20many%20side%20dishes%20in%20Turkish%20cuisine.%3C/p%3E%3Cp%3EBut%20I%20am%20going%20to%20a%20BBQ%20tonight%20at%20a%20friend's%20house%20so%20I%20have%20left%20mine%20chunky%20so%20as%20to%20be%20familiar%20to%20its%20intended%20American%20audience%20as%20a%20(semi)%20standard,%20super%20flavorful,%20conversation%20starting%E2%80%93%20purslane%20weed%20whacker%20salad.%3C/p%3E%3Cp%3ETo%20make%20the%20salad:%20Cut%20the%20tomatoes%20in%20halves%20or%20quesrters%20crosswise%20and%20squeeze%20lightly%20to%20remove%20the%20seeds,%20transfer%20to%20a%20strainer%20to%20drain.%20In%20a%20salad%20bowl,%20mix%20together%20the%20cucumber,%20purslane,%20scallions,%20herbs%20and%20jalape%C3%B1os.%20Add%20the%20tomatoes%20once%20well%20drained.%3C/p%3E%3Cp%3ETo%20make%20the%20dressing:%20Whisk%20together%20the%20olive%20oil,%20lemon%20juice,%20vinegar,%20lemon%20zest,and%20salt%20and%20pepper%20to%20taste.%20Pour%20over%20the%20salad%20and%20toss.%20Taste%20and%20adjust%20the%20seasoning.%20Refrigerate%20for%2020%20to%2030%20minutes%20to%20give%20the%20flavors%20time%20to%20meld.%20Sprinkle%20with%20sumac%20before%20serving%20if%20you%20like.%3C/p%3E%3Cp%3ESERIOUS%20FUN%20FOOD%3C/p%3E%3Cp%3EGreg%20Henry%3C/p%3E%3Cp%3ESippity%20Sup%3C/p%3E){kind=link}
