  • 3 x -lb. eye-of-round roast
  • 2 Tbsp. vegetable oil
  • 1 Tbsp. lemon-pepper seasoning
  • 1/3 c. red wine vinegar
  • 1/3 c. lemon juice
  • 1/3 c. soy sauce
  • 1/3 c. Worcestershire sauce

  1. Marinate meat in a mix of the remaining ingredients for a day or possibly two in the refrigerator, turning several times. Let meat stand at room temperature for an hour before cooking.
  2. Roast, uncovered, with marinade in preheated 250 oven for two hrs. Near the center, the meat will be medium rare (pink). Allow roast to rest for 15 min.
  3. Slice as thin as possible across the grain. Serve hot with reheated marinade, or possibly chill before slicing for tasty sandwiches.
  4. Serves eight generously.
