Margarita Fruit Salad for #RecipeReDux

Yes, I know … three blog posts in the last three days … I can’t believe it either!
I just have so much kitchen goodness to share with you all … and today’s recipe — my first post for Recipe ReDux — is boozy, fruity goodness to the n’th degree!
Before we get to the booze, let me tell you a bit about Recipe ReDux.
The Recipe ReDux was developed as a fun and social way to provide great tasting, healthful recipes based on whole foods and sound nutrition principals — another mission I can easily get behind!
This month, Recipe ReDux tasked its members with cooking, baking, or just mixing it up in the kitchen with spirits, extracts, or other alcohols. Alcohol and food? Sign me up!
When I started thinking about combining food and alcohol — while keeping it both tasty and healthy — my mind immediately went to fruit and tequila. I enjoy a good fruity margarita from time to time, and I knew that I could somehow translate that to the plate … and that’s just what I did with my easy and delicious margarita fruit salad!
Chock full of fruit, lightly sweetened with agave nectar, and with that distinct margarita taste, my margarita fruit salad is a hands-down winner! This simple, flavorful dish will be making many an appearance over the summer … and I hope you give it a try too.
For this recipe, I used a combination of blueberries, pineapple, strawberries, and kiwi, but any combination of fruit you like would proably work. Oh, I also used The Chef and my’s favorite tequila, Espolon. And whether you go with their tequila blanco (light) or tequila reposado (dark), you won’t go wrong at all!
Margarita Fruit Salad
Ingredients:
- 2 cups fresh blueberries
- 2 cups cubed fresh pineapple
- 2 cups sliced fresh strawberries
- 1 cup (about 4 medium) peeled, chopped kiwifruit
- 2 medium limes
- 1/2 cup agave nectar
- 1/4 cup 100% agave tequila
Directions:
Combine the blueberries, pineapple, strawberries, and kiwifruit in a large serving bowl; lightly stir together.
Zest the limes, removing as much zest as possible; set the zest aside. Cut the zested limes in half, then squeeze over a small bowl to yield as much juice as possible; set the juice aside.
In a 1-quart saucepan over medium heat, combine the agave nectar, tequila, and reserved lime juice, then bring to a simmer, stirring frequently to dissolve the agave nectar. Once dissolved, continue to simmer for another two to three minutes.
Remove the syrup mixture from the heat. Pour the warm syrup over the fruit, then gently stir to coat all the fruit. Add the reserved lime zest, then stir again.
Cover and refrigerate until cold, at least 1 hour. Gently stir before serving.
