%3C/p%3E%3Cp%3EWe%20had%20our%20friends%20Tina%20and%20Tony%20over%20for%20supper%20last%20Saturday%20evening%20and%20I%20cooked%20this%20chicken%20for%20us%20for%20our%20supper.%20%20It%20went%20down%20really%20well%20and%20was%20enjoyed%20very%20much%20by%20all%20of%20us.%20%20I%20do%20so%20love%20the%20flavour%20and%20heat%20of%20a%20good%20mustard,%20and%20this%20dish%20uses%20two%20types%20of%20mustard%20.%20.%20.%3C/p%3E%3Cp%3EThe%20chicken%20pieces%20themselves%20are%20coated%20in%20a%20marinade%20of%20smooth%20and%20creamy%20full%20flavoured%20Dijon%20mustard,%20which%20is%20rich%20and%20has%20a%20bit%20of%20heat,%20but%20not%20overwhelmingly%20so%20.%20.%20.%20as%20well%20some%20smoked%20paprika%20for%20a%20bit%20of%20smokiness%20and%20of%20course%20some%20salt%20and%20black%20pepper.%3C/p%3E%3Cp%3EWhile%20the%20chicken%20is%20marinating%20you%20brown%20off%20some%20pancetta%20cubes%20and%20onions%20.%20.%20.%20%20and%20then%20you%20brown%20the%20chicken%20%20.%20.%20.%20%20searing%20in%20that%20marinade%20and%20those%20juices%20all%20the%20way%20around%20the%20pieces%20.%20.%20.%3C/p%3E%3Cp%3EThe%20chicken%20(bacon%20and%20onions)%20are%20then%20braised%20in%20a%20mix%20of%20thyme,%20white%20wine%20and%20maple%20syrup,%20until%20the%20meat%20is%20succulent,%20tender%20and%20delicious.%20%20Stirring%20in%20some%20grainy%20mustard%20and%20cream%20at%20the%20very%20end,%20adds%20a%20bit%20of%20texture%20and%20richness%20to%20the%20sauce,%20which%20is%20so%20delicious%20spooned%20over%20those%20tender%20chicken%20pieces.%20%20Mashed%20potatoes%20or%20rice%20are%20the%20perfect%20accompaniment.%3C/p%3E%3Cp%3E*Maple%20and%20Mustard%20Chicken*%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EA%3C/p%3E%3Cp%3Ewith%20the%20pancetta/bacon.%3C/p%3E%3Cp%3EAdd%20a%20bit%20of%20oil%20to%20the%20pan%20and%3C/p%3E%3Cp%3Estart%20to%20brown%20the%20chicken,%20browning%20it%20on%20all%20sides,%20over%20medium%20high%3C/p%3E%3Cp%3Eheat,%20and%20working%20in%20batches%20if%20necessary.%20%20Remove%20the%20chicken%20as%20it%20is%3C/p%3E%3Cp%3Ebrowned%20all%20over%20to%20a%20plate%20and%20set%20aside.%3C/p%3E%3Cp%3EAdd%20the%20wine%3C/p%3E%3Cp%3Eto%20the%20skillet,%20scraping%20up%20any%20brown%20bits,%20and%20bringing%20to%20the%20boil.%3C/p%3E%3Cp%3EReduce%20to%20low%20and%20then%20add%20the%20pancetta/bacon,%20onions%20and%20maple%20syrup.%3C/p%3E%3Cp%3EStir%20in%20the%20cooked%20pancetta/bacon%20and%20the%20onions.%20%20Return%20the%20chicken%3C/p%3E%3Cp%3Eand%20any%20accumulated%20juices%20to%20the%20pan,%20turning%20the%20chicken%20to%20coat.%3C/p%3E%3Cp%3ECover%20tightly%20and%20cook%20over%20very%20low%20heat%20for%2035%20to%2040%20minutes%20until%20the%3C/p%3E%3Cp%3Echicken%20is%20very%20tender.%3C/p%3E%3Cp%3ERemove%20the%20chicken%20to%20a%20warm%20platter.%20%20Stir%3C/p%3E%3Cp%3Ethe%20grainy%20mustard%20and%20cream%20into%20the%20pan%20juices%20and%20heat%20through.%3C/p%3E%3Cp%3ESpoon%20over%20the%20chicken%20and%20serve%20immediately.%20%20Delicious!%3C/p%3E){kind=link}
