- 1/3 c. Maple syrup
- 1 Tbsp. Spicy brown mustard
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 1/4 c. Dry breadcrumbs
- 4 x Pork cutlets, (4-oz)
- 2 tsp Extra virgin olive oil
- 1/2 c. Apple cider
- 2 med Golden brown Delicious apples, each cored and cut into 16 wedges
- 2 Tbsp. Minced fresh parsley

- Combine first 4 ingredients in a small bowl; stir well with a wire whisk, and set aside. Place breadcrumbs in a large zip-top plastic bag. Add in pork; seal bag, and shake to coat pork with breadcrumbs.
- Heat oil in a large nonstick skillet over medium heat. Add in pork, and cook 2 min on each side or possibly till golden. Add in cider and apple wedges; bring to a boil. Reduce heat, and simmer, uncovered, 10 min or possibly till pork is done. Add in maple syrup mix, and cook 5 min or possibly till thick and syrupy.
- Yield: 4 servings (serving size: 3 ounces pork and 8 apple wedges).
- Serving Ideas : Sprinkle with parsley.
